We just love our new food processor and using up the ends of our loaves of whole wheat bread is so quick and easy and a great addition to this recipe. Breaded Eggplant rounds, topped with the healthy jar sauce of your choice (we like Aldi's All Natural Tomato Basil by Grandessa), and some part-skim Mozzarella make for a wonderfully crispy baked, not fried, eggplant parmesan even the kids will love!
Chop garlic and mushrooms. Add to beef while cooking. Once beef is cooked, add the pasta sauce and any seasonings you want to add more flavour.
Simmer beef mixture while you cook the noodles and preheat oven to 350 degrees.
Once noodles are ready combine with beef mixture. Pour into a casserole dish. Top with shaved mozzarella cheese.
Cook in oven for 20 minutes
