Vegetarian Meals Recipes (Most Popular)
Feel free to add, omit or swap around the veg in this dish. I'd reccommend mushrooms or courgette (zucchini). Great with rice. Omit the potatoes and swap coriander with fresh basil for a perfect pasta sauce.
This is my take on the Cheesecake Factory's Tomato Basil pasta...hungry for it, but not for the salt and calories that take me a week to undo.
The original variation I did to Alton Brown's baked tomato sauce recipe. I wasn't struck by the sauce, it was good and very thick, but I couldn't stop my DH from eating the baked tomatoes before I even had a chance to blend it into sauce! So, I sprinkled some cheese on and browned them and tahdah! Some things we do with these is have them on salad, or on toasted English muffins as a pizza substitute. I have also sprinkled with taco meat and low fat cheddar for a Mexican dish and stuffed them with lil meatballs and covered them with chopped up chicken and mozzarella cheese. You can do whatever you like...really. And sooo good for you.
A dish from Jebaa and some of its surrounding cities in the South of Lebanon that are among the rare places in Lebanon to grow red kidney beans. As I live in the US now, it was a pleasure for us and specially for my dad to discover that red kidney beans are widely and generously available in the US market :) (Thanks to the mexican cuisine). I will try to upload a picture some other time.
