I don't like to cook, have never roasted a pepper, and am not really a fan of any kind of beans other than baked beans. BUT, because I never get enough fiber in my day and this recipe looked interesting, I thought I'd try it. IT IS AMAZING! Even my husband liked it and he won't eat hummus at all!
