I like to add spinach, diced tomatos and a little bit of cheese to mine. Tastes delicious, though it has more calories because of the cheese.
I FIX MY ALL MY EGGS IN MICROWAVE TO AVOID HAVING TO USE ANY OIL,MARG OR BUTTER. I ADD NO FAT SKIM MILK(1OZ PER EGG) TO LIGHTEN AND FLUFF IT MORE .LOVE MY EGGS AND VEGETABLES.ALSO USE GREEN,RED,YELLOW AND HOT PEPPERS TO SPICE IT UP A BIT.CAN ADD LOW FAT CHEESE IN PLACE OF OIL(ETC) FOR A MORE FLAVOR
Sound delicious! And if you don't need four servings, I love leftover omelet for a sandwich filling on whole-grain, high-fiber bread spread with Dijon mustard or your choice of spread, with onion, roasted red pepper (jarred) and tomato--or at room temp accompanied by a green salad.
This sounds very good. But I would use Egg substitute to cut the calories further, and that would allow for some shredded cheese!
I can't wait to try this, this weekend. I love veggies and would like to add a little cheese. Don't know what it will do to calorie count.
