Another idea for instant corn muffins is to add some canned pumpkin to the batter for extra fiber and vitamins. It also makes the muffins less crumbly! I put in 1/3 c. to 1/2 c. for one package of Jiffy.
You could use egg substitute instead of a real egg and save the fat/calories etc
