high fibre muffin loaf
I'm not a baker or any kind of cook. This is something I started making in the last month or so and am entering it so I can log my portions. I'm sorry if it doesn't meet anyone's standards.
It's just basically Quaker muffin mix w/ equal parts bran, oat bran, ground flax seed and oats with whatever fruit is on hand. Cranberries and blueberries are really nice, but I've enjoyed dates too.
I'll have to amend this later - they didn't have nutritional info for the muffin mix and I don't have a package on hand to copy it from. The fibre should be higher. I had to guess with the mix that looked closest in calories. I also had to choose "crude bran" instead of wheat germ. I'll look for that info elsewhere and enter it.
The first time I made this, I couldn't find my muffin tins so I made it into loaves. I prefer it that way now - moister and quicker and easier to bake.
