Introduction

A tasty high fibre muffin with a bit of sweetness with raisins and chocolate chips added. May eliminate the raisins or chocolate chips and add nuts, dates, coconut or whatever you please. Ingredients

    1 cup bananas, mashed
    1 cup unsweetened applesauce
    2 eggs
    1/4 cup oil, Olive or Canola or whatever you prefer.
    12 tsp splenda
    6 tsp splenda brown sugar blend
    1 tsp baking soda
    2 tsp baking powder
    1/2 tsp salt
    6 Tbsp ground flax seed
    1 cup wheat germ
    1 cup natural bran
    1 cup 1% milk
    1 cup all purpose flour
    2 cups whole wheat flour
    1 cup raisins
    1 cup mini chocolate chips

Directions

Beat bananas, applesauce, sweeteners , oil and eggs until fluffy. Add Baking soda, Baking powder and salt. Mix. Add dry ingredients leaving flour to last. Add milk and then fold in the flour. Do not over mix. Then add the raisins and chocolate chips. I use large muffin paper cups and fill to top. bake in 375 oven for 20-25 minutes. Makes 24 muffins.
