    1 - 8.5 oz box 'Jiffy' corn muffin mix
    1/3 c Silk Light Plain Soymilk
    1 large egg


Heat oven to 400*. Mix all together. Spray muffin tin with non-stick spray. Bake 15 - 20 minutes until golden brown.

    Another idea for instant corn muffins is to add some canned pumpkin to the batter for extra fiber and vitamins. It also makes the muffins less crumbly! I put in 1/3 c. to 1/2 c. for one package of Jiffy. - 1/15/08

  • You could use egg substitute instead of a real egg and save the fat/calories etc - 1/15/08
