Substituted fat free half and half since I didn't have evaporated skim. I added an extra 1/2 c water and it was pretty creamy. My family loved it!
Great! One of the best low fat recipes I have ever made. Coming from New Orleans, that means it's good. Made just minor changes. Sauted onion and celery with mushrooms and added a tablespoon of garlic with pasta water.Sprinkled with cheese. Yum!
Very good recipe! Creamy flavor but not heavy. I added a bit of tabasco (we like it spicy!) I couldn't find sodium free cajun seasoning. I added 1/4 cup more water and 1/4 cup more chicken broth and it worked out well.
