I love this soup! I eat it every weekday for lunch. I replaced the eggplant with zucchini and eliminated the garlic (I have to wait on customers) It makes enough that I divide it into 8 containers and put 2 oz of cooked ground turkey into each. Adds a little protein and yumminess! No cheese for me.
I make this soup and love it. I substitute the eggplant for zucchini and use no-sodium chicken broth. I don't add the cheese, but I do incorporate a small portion of ground turkey. LOVE IT!!
This is SOOOOOO good! I made it for dinner and no one suspected it was reduced calorie. You don't need to use all of the cheese, either, so the calories are even lower.
