A great idea! Like this very much. Reminds me a bit of oatmeal pie that is super but high calorie and sugar. This makes a good substitute.
I added one more egg because I wanted to go for super custardy. I used a few drops of stevia and a heavy 1/2 cup of erythritol and it came out super. My version was sweet enough for me and very custardy. I did use the brown sugar on top under the broiler. Don't skip this step.
Easy to make and delicious. I made individual servings which cut baking time to 25 min and made the night before. Reheated in micro for 1 min and under broiler for 2 mins in the am. Just don't add brown sugar when baking ahead; wait until ready to put under broiler when reheating.
This was good. I only had "quick" oatmeal and will try to get old fashioned for this next time. Mine ended up kind of "bread pudding" consistency, but was tasty. I did add 1-2 extra Tbsp br sugar as I am hoping the kids will eat this as an afternoon snack.
