This was really good, but high on the sodium, so I cut down on the amount of cheese and made my own enchilada sauce. I added corn and pinto beans and my family loved it! :-) Submitted by:

Made this recipe as written for the most part (only used less cheese). Mu hubby and youngest daughter loved it (thus the 3 stars) but I did not care for it. Tasted bland and needs more seasoning (low sodium taco seasoning perhaps) and veggies. Next time, I'll use some of the recommendations. Submitted by:

I LOVE this casserole and it tasted great when reheated the next day. I did add black beans and corn as other people said. We put plain fat free greek yogurt on top when we ate in place of sour cream. Yummy!! Submitted by:
