Great as written, but to make it a bit healthier we sub reduced fat or fat free cheese and add extra veggies like peppers and tomatoes, and sometimes black beans. Also makes enough to freeze leftovers as individual servings

I love this chicken enchilada casserole recipe. The only thing I changed is....I use fat free cheese and whole wheat tortillas! Delicious!
This was really good, but high on the sodium, so I cut down on the amount of cheese and made my own enchilada sauce. I added corn and pinto beans and my family loved it! :-)
Made this recipe as written for the most part (only used less cheese). Mu hubby and youngest daughter loved it (thus the 3 stars) but I did not care for it. Tasted bland and needs more seasoning (low sodium taco seasoning perhaps) and veggies. Next time, I'll use some of the recommendations.
I would love to try this recipe but it doesn't say what the serving size is. I can't even log it if I tried it because I don't know how many enchiladas equal 268.7 calories......... Ok found it. Thanks.
I LOVE this casserole and it tasted great when reheated the next day. I did add black beans and corn as other people said. We put plain fat free greek yogurt on top when we ate in place of sour cream. Yummy!!
So easy and can be done with kids. I substituted black beans for some of the chicken and used a reduced fat cheese.
