Introduction

Number of Servings: 40

Ingredients

    ~ 1/2 cup Sugar
    ~ 1/2 cup Applesauce (sweetened)
    ~ 1/2 cup Eggbeaters
    ~ 1 tsp Baking Powder
    ~ 1 tsp Cinnamon
    ~ 1/2 tsp Salt
    ~ 1/2 tsp Nutmeg
    ~ 2 cups Oats
    ~ 1 cup chopped Apples

Directions

~ Cream Sugar and Applesauce together, beat in Eggs
~ Combine 1/2 of Oats (1 cup), Baking Powder, Cinnamon, Nutmeg, & Salt
~ Stir Dry ingredients into Sugar Mixture until well blended
~ Fold in remaining Oats (1 cup) & cubed Apples
~ Drop dough on parchment paper lined cookie sheets
~ Bake at 350° for 12-15 mins, Cool and Enjoy!

    I thought that these were great. I made them just like the recipe and came out with 40 cookies. I used old-fashioned oats, maybe others used the quick-cooking? Nice to have a cookie to not feel guilty about. I used unsweetened applesauce and they were still plenty sweet. I'll make them again! - 9/15/10

    I loved these!! I added an 1/8 t xantham gum, a scant 1/4 cup almond flour and used two real eggs. I substituted sugar w/ 1/4 c splenda brown sugar. Wow! Delish! Thanks for the recipe! - 4/2/10

    I made these with 100% whole grain oats and unsweetened applesauce! Baked for 15 minutes and they were so delicious! Mine did not come out soggy. - 3/18/12

    Great taste!! They taste like the breakfast apple cinnamon oatmeal. Which was always my favorite flavor as a kid. I was unable to get 40 cookies though, only 30 using a tablespoon measure. Will certainly make again and again and again!!!!!!! - 4/3/10

    I was completely out of Cinnamon so I substituted with a 1/2tsp of vanilla extract. I also used 2 real eggs instead of egg beaters. This recipe was easy and delish! - 2/15/12

    made them replacing 1c. oats w/ whole wheat flour (just because I ran out of oats), and grated the apple. should have baked for couple of more minutes...anyway DELICIOUS! will make them again. - 1/23/12

    Very simple and quick to make. It's like having "portable" oatmeal snacks. I think I only got 20, though. Great for people with gluten intolerance if you use gf certified oats. - 6/13/10

    I used 2 regular eggs, unsweetened pear sauce & a fresh chopped pear since I didn't have apples, added a small handful of golden raisins & cut the sugar down too. They came out really great, will definitely make them again! - 5/12/13

    Ok these are good...too good...i could eat a pan of them! My 2 year old loves them too. I think next time i will lessen the sugar though...they are super sweet and i used unsweetened applesauce. - 9/22/12

    I doubled the recipe and after the 1st pan, I added 1/2 cup more oats. Then I added coconut. Very easy recipe and very tasty. The extra oats and coconut made them more stick together more. - 10/7/18

    I made these tonight on a WHIM!!! I did not have baking powder so I used 1 tsp flour.Also I chopped one apple (3/4 C) I made 33 cookies... The taste was good I will try it using the correct ingredients. When I input ingredients into myfitnesspal it gave 32 calories per cookie!!! - 1/22/14

    I used unsweetened applesauce, 2 eggs, old-fashioned oats, no parchment paper. I got 32--I was trying to fit them all on smaller pans so I added extra to some. They didn't stay together very well. Maybe if they were smaller and flatter. More like cereal bars than cookies but yummy. - 9/22/13

    I liked this cookie, although I had some trouble keeping it from crumbling. I discovered I needed to let it cool longer. Also, while good, it needed something extra. So I added 1/4 t of cloves which was wonderful! I also tried vanilla, which was good but overpowered the other ingredients. add cloves - 4/22/12

    I enjoyed these as a healthy treat. I used two apples which was closer to two cups than one, I suggest 1 large apple. It kind of lost the cookie feel being so chunky and the last few cookies, which had fewer apple bits were more like cookies. I will make these again... - 1/12/11

    Tastes ok. I'd use less Nutmeg though. I agree with THEADMIRAL, "the cookies never looked baked" and were a bit soggy in the center, but that could be because I made my cookies a bit bigger. I didn't get 40, but next time I'll make them smaller. - 11/24/10

    It was very easy to assemble, but the cookies never looked "baked", were pretty soggy even after 15-17 minutes in the oven, and I didn't get 40 cookies. Using a tablespoon per cookie, I only got 33. The cookies taste good, but it's like biting into loose granola or something. - 10/14/10
