Ingredients

    4 chicken breast halves, cooked and cut into bite size pieces
    6 whole wheat tortillas, fajita size
    1 can diced Ro-Tel tomatoes with green chilis
    1 can 98% fat free cream of chicken soup
    1 can 98% fat free cream of celery soup
    1.5 cups Kraft Free shredded cheese

Directions

Tear the tortillas into bite size pieces and put in the bottom of a 9 x 13 cake pan
In a seperate bowl, mix the Ro-Tel and soups together. Add in the chicken and mix again.
Pour the chicken mixture over the tortillas
Top with cheese
Cover with foil, pierce to vent, and bake for 45 minutes to one hour. Enjoy!

    The flavor of this was delicious. I did not put the torn-up tortillas on the bottom, however. Flour tortillas would turn to mushy gluey paste. I put them on top of the soup/RoTel (drained this!)/chicken mixture, and sprinkled the cheese over top. Came out very nicely cooked, and no "glue". 350F 45m. - 5/6/10

    The tortillas were too crusty and hard, and too mushy on the top. It's also way too salty for the serving size for one meal. Would not make again. - 1/7/09

    my daughter just had a baby and I made this to give her a break from cooking.was ok.it didn't go to waist but everyone said....they would not want to eat it again...I was disappointed....the good thing about it is you are not tempted to eat more than one serving - 7/21/07

    I made this recipe on Saturday and it was better over the next few days I ate it. It definetly is a keeper for me. I did substitute corn tortilla and used cream of mushroom soup instead of cream of celery. I love mexican food and this recipe helps me not deprive myself. - 7/17/07

    This was great!!! We love Mexican food and normally there are just too many calories to have it. We changed the recipe a bit too. We used flour tortillas, small ones and we use only one can of soup...low fat cream of onion. We also used only 3 chicken breast It was just great! We will make it again. - 7/14/07

    It sounds a lot like a diet version of King Ranch casserole. When I make that, I start out with a layer of sauce on the bottom. That might make a difference for people who complained about the hard tortillas. I also would pour out a bit of the water from the Rotel before mixing. I'll try it soon - 3/27/10

    I hope to try this over the weekend...sounds yummy! One way to reduce the sodium would be to use Campbell's Healthy Request soups. They are 98% ff and also lower sodium. You could also look for low sodium diced tomatoes and add green chiles to replace the Ro-tel. There are now ff ww tortillas too! - 7/13/07
