Ingredients

    2 Tbsp. Olive oil
    1.5 c. white rice
    1 c. tomato sauce
    2 c. water
    3 chicken bouillon cubes, crushed
    onion powder to taste

Directions

In a large saucepan brown rice in olive oil. While rice browns, mix together tomato sauce, water, chicken bouillon, and a couple sprinkles of onion powder. Add to browned rice. Bring to boil, reduce heat and simmer until liquid is absorbed, about 25 min.

    I added a dash of chili power and a dash of cayenne pepper. I made sure to use onion powder and not onion salt. Served it w/ chicken tacos and fat free refried beans.

    I add 1/2 c chopped onion and 2 cloves chopped garlic to this recipe (cooking in the oil for about 3 minutes before I put the rice in to brown) and omit the onion powder. Then I procceed with the recipe as is. This is delicious and comes out like restaurant Mexican rice every time. Love it! - 2/19/10

    Although I slightly adjusted the seasoning because I think that is not enough flavor for the whole plain rice and tomato sauce, I really appreciate this recipe for cook technique and time. I used some leftover diced onion, sauteed first, and added Penzey's Southwest seasoning. It came out perfectly. - 5/13/19

    I made this for lunch yesterday with the Southwestern Pork Tenderloin that was on my meal planner. The BF liked it so much he had seconds, and that never happens when I cook. :) I did add a lot of onion powder because I felt that the tomato was too overwhelming of a taste. - 2/6/12

    Awesome base recipe...

    Changes made were :
    - used vegetable broth instead of water and bouillon
    -added diced green peppers & jalapenos when frying rice
    - used 1/2 tomato paste and 1/2 Sofrito In place of tomato
    sauce.

    I made this to go with vegetarian refried beans in a burrito (I substituted vegetable bouillon and brown rice). I also added some spices (pepper, cilantro, etc) to spice it up a bit. Rather easy to make and flavorful. - 7/23/07

    I make this but I chop up fresh onions and brown them with the rice. It gives it much more flavor then the onion powder. Just an FYI - 7/9/07
