Ingredients

    Ingredients:
    Extra Virgin Olive Oil 1 tbsp

    Onions, raw, 2 cup, chopped 1 red and 1 white
    Yams, 2 cup, cubes
    Beans, black, 1 1/2 15oz cans
    Beans, red kidney, 1 1/2 15 oz cans
    Oregano, groundb1/3 tsp
    Chicken Broth, 80 fl oz or 2 1/2 32oz cans
    Chicken Breast, no skin 2 cups diced cooked,
    Salt, 1.5 tsp
    Pepper, black, 1 tsp
    fresh chopped spinich, 16 cup (remove)
    Kale, raw 8 cup, chopped or any raw greens
    Peppers, sweet, red diced
    parmesean cheese if desired but will add more calories that you will need to calculate in on your own


Directions

heat oil in large (and i do mean large) stock pot over medium high heat. saute onions 5 min. stir in remaining ingredients except bell pepper and parmesean cheese. bring to boil. reduce heat, cover and lightly boil until sweet potatoes are tender 12-15 minutes.
adjust seasionings to taste. makes 8 3 cup servings. store in individual containers for up to 4 days in fridge or freeze. heat before serving and garnish with red bell pepper and parmesean if desired.     this shows that 16 cups of spinach has 1280 calories but it should be 112 calories
    this is great soup! it is yummy & filling-a much healthier alternative to the cabbage soup recipe

    Please review and correct the calories and sodium content in the recipe! Also the fat and the protein. Something is seriously wrong with these numbers. They cannot be correct. Maybe the decimal was moved on all of them?

    I'm not rating it yet cause I have not ate it yet cause I need to know if the nutritional value of the soup was recorded correctly, because w/the way it is, I would not be able to eat anything all day besides this cause this goes beyond my daily limit in calories and everything else for that matter. - 6/16/11

    This is good. I didn't put chicken in mine and the taste was still soooo good. This is my favorite veggie soup. I look forward to having some. It is very low calorie, especially without the chicken. Great soup before and during meals. - 1/24/11
