Introduction

Breakfast on the go - just like Mom's pumpkin pie! Breakfast on the go - just like Mom's pumpkin pie!
Number of Servings: 1

Ingredients

    6 ice cubes
    1/3 cup canned pumpkin puree
    1/3 cup 2% evaporated milk
    1 cup vanilla-flavored soy milk
    2 packets Splenda
    Cinnamon (to taste)
    Nutmeg (to taste)
    1 scoop vanilla protein powder



Directions

Add all ice cubes, wet ingredients and dry ingredients to blender.
Blend until shake consistency.
Pour into large tumbler, add a straw and go!

Please note the evaporated milk is used simply for it's creamy consistency in shakes. For those lactose intolerant, remove evaporated milk and increase soy milk to 1-1/3 cup. A vanilla flavor protein powder is preferable for this recipe.

    I make a version of this, but instead of evaporated milk, I eliminate the ice cubes and use frozen banana slices to thicken it (also a good way to deal with over-ripe bananas). Gives you another serving of fruit and keeps the drink cold without diluting it. - 5/22/08

    Yum. I also recommend usuing frozen bananas (or even frozen pumpkin puree)..I hate how melted ice waters down a smoothie. I would also try using frozen berries in this (in place of some of the ice). Definitely would make this again! - 5/22/08

    What a great idea to use canned pumpkin in a protein shake! Like everyone else, I completely changed up your recipe, but I'll still credit you for the idea! :) I only used skim milk, not soy or evaporated, and unstead of splenda used eggnog flavored coffeemate coffee creamer.     I simplified the recipe by skipping the evaporated milk. I doubled the pumpkin instead. I used 1% milk instead of soy and left the rest the same. was GREAT! My kids love it too! - 5/29/08

    I just made this pumpkin shake recipe and it was very tasty. I used 1/3 cup Vanilla Activia in place of the evaporated milk and added a bit more soy milk for thinning. It blends up thick and filling !! Thanks for sharing - 9/21/08

    I have been opening canned pumpkin and adding fat free vanilla yogurt , protein powder and the 0 calorie sugar free carmel flavoring that I buy for coffee flavor at Sams Club. Yum. Eat it with a spoon, but it is great. I don't like to "drink" my calories - 10/20/07

    What a great protein shake concept! I only had skim milk and chocolate protein powder on hand, but that's okay because I love pumpkin pie on chocolate cookie/graham cracker crust so it worked out great! I've got me a new favorite fall protein shake :). Will try the original variation, too. - 11/2/07

    This didn't turn out for me. I omitted the ice cubes and the evaporated milk, and used 1-1/3 cups of vanilla soy milk and added ginger. But the result tasted like my protein powder, so I ended up tripling the pumpkin and adding more sweeteners. I think this was the fault of my protein powder. - 7/21/08

    Yum! Next time will try it with more pumpkin, maybe chocolate protein powder. It needed just a little more flavor, I think; it was good, but subtle... I wanted something with a bit more... something! But very good--and lots of great variations to try in these ratings! - 7/6/08

    Ok I used rice milk instead of soy, 1/3 fzn. yogurt instead ev. milk, add a tlbs honey instead of art. swtnr, and flax . (I will have to try to mix it with my choc. whey protein powder another time. - 5/22/08

    I didn't rate this recipe b/c I didn't want to skew the ratings. Don't make this w/ rice milk. I did and it wasn't that good. I didn't have either soy mile or evap. milk on hand so I just used what I had. I'll try this recipe again with soy & evap. milks to see if I like it better that way. - 2/16/08

    Excellent, tryed several variations, including the original and liked it. My best variation is with eggnog soymilk and fat/sugar free yogurt combo, in place of can milk. Only need splenda for individual taste. - 10/27/07

    I made this last night and loved it!!! I used the vanilla soy milk and 1/2 a cup of pumpkin..I didnt have the protein to add but will be shopping for that in the near future..I froze the soy milk rather than using the ice cubes so it wouldnt dilute the flavor..It was very Yummy!!!     I changed it a little too. I used vanilla fat/sugar free yogurt and only .5 cup of soy milk. I only used 1 pkt of the Splenda Flavor Blends for coffee in French Vanilla and no protein powder. I'm going to see if my son likes it. It would be way better as an after school snack then what he has. - 9/5/07

    I wanted to love it, but I don't. I made it strictly according to the recipe the first time and it came out way too liquidy. The next time I cut the soy milk down to 1/3 cup and added two cups ice to get more of a smoothie consistency. I normally love pumpkin but I don't personally love this drink. - 5/30/13

    Yum! I added ginger and cloves, subbed skim for evaporated milk and I didn't have protein powder so added plain Greek yogurt. I also used unsweetened coconut milk instead of soy.     I tried this recipe it was very tasty. I also made a smoothie with a baked sweet potato (cooled), 2 frozen banannas and 1 cup of almond milk*(40),add 2 shakes of nutmeg or all spice blend without any sugars or ice cubes nice texture to it also. - 4/6/11

    What a great idea, my whole family loved this. I have made it a couple times since and use almond milk rather than dairy, and no sweetener, as my protein powder has its own.

    I even modified it for a post workout drink (scoop of pumpkin and scoop of protein powder, spice and water. Yum.

    Great smoothie! I used vanilla flavored unsweetened almond milk in place of the soy milk. Also substitued pumpkin pie spice in place of the cinnamon and nutmeg. It is creamy and delicious. I think I will try freezing the pumpkin or the almond milk for more thickening. - 10/4/10
