I've done this before myself. I usually use oil and vinegar (olive oil being a healthy oil to use) and often make my homemade salad dressing, which just means adding a few spices like garlic and lemon pepper (Mrs. Dash has a lemon pepper blend with no salt). You can also marinate 1-2 hrs/ overnight. - 2/23/10

Oh my! This recipe was easy-peasy, and my husband went on and on about it! The chicken stayed nice and moist and the italian dressing adds a sweetness to the chicken that's very nice. I added some italian herbs (basil, oregano and rosemary), and sprinkled crumbled shredded wheat on top for crunch - 3/19/11

husband really liked it he had pasta and sauce, I had salad with it, however I used a thigh for my portion instead of a breast,I like dark meat, less cals. Also I added a few tablespoons of an Italain cheese blend and parsley and oregano, to make it true "Italian Chicken" USE FOIL WHEN BAKING! - 9/6/07
