Ingredients

    1 package of extra lean ground turkey
    3/4 cup salsa (make sure it has no added sugar, I use Herdez)
    1/4 cup italian seasond bread crumbs
    1 egg

Directions

Heat oven to 400, spray baking dish with cooking spray, I don't use a loaf pan so all fat can easily be removed after cooking.

Mix egg, salsa and bread crumbs together and add to ground turkey. Mix with hands until combined. Make a loaf shape and place into baking dish. Cook for 1 hour or until internal temperature reaches healthy cooking levels.

    I added a bit more breadcrumbs to this recipe thinking it was too wet but I didn't need to. Next time will use a hotter salsa for more flavor - used mild this time and it was a little flat. - 9/23/11
