Introduction

This is a tasty side that can be added to any main course. This is a tasty side that can be added to any main course.

Ingredients

    2 large sweet potatoes - sliced into thin strips
    1/8 cup extra virgin olive oil
    5 tbsp Splenda
    1 tbsp ground cinnamon
    2 tbsp Kosher salt

Directions

Heat oven to 425 degrees.
In a small bowl, combine the Splenda, ground cinnamon, and salt. Set to the side.
Arrange the sliced sweet potatoes on a cookie sheet so that they are in one layer.
Drizzle with extra virgin olive oil.
Sprinkle with Splenda mixture.
Bake at 425 degrees for 20-30 minutes, depending on desired crispiness.
Let cool 5-10 minutes before eating.

    The recipe is actually good but I eliminated the splenda and the cinnamon. Sweet potatoes are naturally sweet and that's enough for me - 7/25/09

    I have been making baked sweet potato fries for years, but I add crushed fresh garlic and/or garlic salt, chili powder, cumin, pepper in a ziploc bag with the olive oil, shake up to thoroughly coat the pieces, and then bake. I also have used "Caribbean Jerk" seasoning instead of the other spices. - 6/16/08

    When I put this in the recipe calculator, I got fewer calories (about 94) and less sodium (about 2000) - not sure why. That's still a lot of sodium I can't have, so I'm going to try it with little or no salt. - 6/19/08

    I make my sweet potato fries by just spraying them with EVoo spray and sprinkling them with garlic powder and whatever spices and/or hebs I'm in the mood for that day. I'd never add so much salt tho - wouldn't be good for my husband especially and any of us in general. - 6/13/08

    I love sweet potato to begin with so this was very good. I added a bit of EVOO a pinch of pepper and added crushed garlic and mixed everything together and it tasted wonderful.. hubby and the kids really enjoyed them and we also ate the baked garlic which was very good. - 6/13/08

    My way of making Sweet Potatoe 'Fries" is to do more of a 'home-fries'cut (chunky). Then tos with 1/4c EVOO and 1/8c/ Light Soy or Teriyaki and 1/8 t. Cayene; Bake at 425 for 20 -30 mins. I've also made these then cooled them and tossed with 1/4c. Balsamic vinegar for a salad in the summer!! - 6/15/08

    I made this without the sugar or cinn. and used a ziplock bag with a small amt of EVOO and shook the cut up potatoes before placing in oven. Make them all the time. They don't need seasoning I don't think!

    I'd make this! But not with the salt or splenda. Just sprinkle some cinnamon and nutmeg on the fries. I'd also cook them on a wire rack -- let any excess oil drain away. - 7/26/09

    I usually put my fries in a plastic bag with olive oil and some seasonings like basil and garlic and pepper, shake onto a cookie sheet and bake. I'll try some of the other spices now. - 7/25/09

    Coach SP_STEPF-Stepfanie's roast veggie recipe w/twist is- 375F (15min a side) use 2 cooky sheets (brush w/olive oil) lay 1/4 inch slice veggies on pan-brush w/oil- sprinkle w/garlic powder & black pepper. Did NOT use salt, sugar, cinnamon, so thought sweet potatoes would taste ick, but YUM-YUM!! - 7/25/09

    Very good. I usually make mine with the salt and chili pepper and duh, didn't think of cinnamon. I left out the salt and splenda by accident - so caught up in thinking "why didn't I think of cinnamon" and they were still really good. May try it next time with splenda but didn't miss it this time . - 6/18/08

    I've heard these called Sweet Potato Dollars and make them a lot. I don't ever use Splenda (Stevia is better for you) but agee that the sweet potatoes are sweet enough and I use Herbamare for seasoning for everything. I'll try the cinnamon! - 6/18/08

    I love sweet potatoes I omit the splenda--they are already sweet enough. Splenda is nasty stuff we don't need to put that chemical in our bodies!! If you think splenda is "just another sweetener" think again and do some research on it. I guarantee you won't be buying it any more!!!!! - 6/16/08

    Sweet Potatoes are usually good without anything except spray on butter, if you have good potatoes. Otherwisethe sweetner and spices may be needed. I used a slight sprinkle of sea salt. - 7/26/09

    I don't use artificial sweeteners or any other man-made ingredients. Use a real sweetener (brown sugar, honey, maple syrup, stevia, etc) instead or nothing since sweet potatoes are...sweet! We need to respect our bodies and and keep most of the food we consume as "close to the farm" as possible. - 7/25/09

    never tried with a sweetener. we like sweet potatoes that are nuked and then roasted either in the oven or right on the grill in a grilling pan. also good with carrots and parsnips. can not get hubby to try turnips, but we grill a lot of veg's this way at least once or twice a week - 6/17/08

    I make these but I use the following spices: a tiny bit of cayjan seasoning, paprika, cinnamon, nutmeg and mix it in a plastic bag with a small amount of spray veg oil. Then dip them in a FF ranch once cooked. Sooooo YUMMY - 6/14/08

    I actually make sweet potato fries but wouldn't really care for these that much. I do make them without the splenda, cinnamon, and salt but I do spray no cal butter flavor pam, garlic powder and any other seasoning I like. - 6/13/08
