Introduction

This is awesome, easy to make, and a huge hit at parties when you want to serve something more creative than hummus!

Number of Servings: 6

Ingredients

    Ingredients:

    1 C (overflowing) canned pumpkin
    1 C black beans (rinsed)
    1/2 C cannellini beans (rinsed)
    2 Tbsp extra virgin olive oil
    2 cloves garlic
    juice from 2 lemons
    1/2 tsp cumin (this totally made the dip!)
    1/4 tsp salt
    1/4 tsp pepper

Directions

Toss it all into a food processor and whirl away! Keep refrigerated until ready to par-tay, then serve with blue corn tortilla chips, pita chips, crackers, veggies, or whatever you like!

    This is very good, similar to humus, and i like the subtle pumpkin flavor. And it keeps well too, survived a whole week in the fridge. It's got too much lemon juice, though, and it still lacks something to be perfect for my tastes. I think i'll try adding some tahini next time and see what happens! - 10/10/10

    I have butternut squash taking over my garden. I am going to roast some and substitute it for the pumpkin. I am THRILLED to have a new way to prepare it! I can't wait to try this recipe. - 7/17/10

    Sounds great - I can't wait to try it.

    Re: pumpkin shortage - there was a cold spell last year that ruined the crop and caused the shortage. Pumpkins are growing again and we should have more on the shelves in a few months! I love pumpkin and am eager to get my hands on some.

    Sounds good. I can't believe that stores don't carry canned pumpkin all year around. I live in Ontario Canada and our stores have it all the time..sometimes it is hard to find. Some stores have it in the bakery aisle, canned veggies or fruit aisle. I hope you find it. - 8/3/10

    Only problem is finding pumpkin after the holidays!
    I have been begging the local grocery stores to carry canned pumpkin all year round without much success! It's a highly nutritious veggie and should be on "perfect food" list!

    I would like to add a tip in reference, to this recipe: I would like to have recipe so it used whole can (example 1 can pumpkin:16 oz= 2 cups (maybe not heaping) same with beans 1 can =2 cups, +1 cup of cannellini beans instead of 1/2 cup, but this recipe calls for juice of two lemons, do I double? - 9/5/14

    Love this dip. I did change the two lemons to one lime. Very subtle and yummy. My garlic cloves were big so has a fairly strong garlic bite to it. Definitely will make again and again. - 12/17/13

    YUMMMMMMM!!! Forget the "dip" part, I could eat this with a spoon!
    I used a whole head of roasted garlic, juice of just one lemon, and a whole can of cannelini beans instead of part black beans.

    sounds yummy. as for the serving size.. a quick guess-timate tells me it makes just over 2 and a 1/2 cups .. divide by 6.. wow that was hard.. 1/4 cup plus 2 &1/2 tablespoons.. or just shy of 1/3 cup. lost art of homemaking......... - 9/11/11

    I LOVED this dip - it really is a lot like hummus, but with a little more citrus flavor. I boiled acorn squash in place of pumpkin because that's what I had on hand. I just added the chunks of squash to the food processor. The dip was very good warm too! - 8/7/10

    I LOVE this recipe ! ! I am now addicted to it. I love pumpkin anyway, and the cumin just makes it. Fortunately I had a can of pumpkin in my pantry. I can't believe there is a shortage on it. I think next time, I'll try it with thew butternut squash. - 8/5/10

    Sounds good, I have some pumpkin in the pantry and will make when my Hummus runs out. For those of you who can't find pumpkin, the butternut squash sounds like a good sub. when I can't get that fresh, I find it in the frozen veggies isle. Green Giant I think - 8/5/10

    I really liked it. I'm normally not a big hummus fan so this was a great alternative. Pumpkin shortage???? My husband has 300 POUNDS of pumpkin growing in my garden right now. And that's just ONE pumpkin. Maybe I should be taking orders for after the weigh in? :) - 8/4/10
