Ingredients

2 cups Health Smart Bisquick
1.25 Soy Milk or 2% Milk
1 dash (.5 tsp) of Vanilla Extract
1/4 Cup of Egg Beaters
Directions
Put the Bisquick into a mixing bowl first and use a fork to "fluff" it up a little. It will add more air into the mix, which will make the pancakes even fluffier then just pouring all the ingredients in at once. Mix all the rest of the ingredients together. Then use a 1/8 cup for a scoop so that they all come out the same size, pour onto griddle. Flip when edges start browning. Wait a minute or two, then pull and serve.

The recipe sounds easy. I've been cutting the box recipe in half and my pancakes aren't fluffy. How do I cut your recipe down for one person? If I make extra, can I freeze it? - 4/25/10

To tell you the truth, I'm not sure how to cut it down to one person. You could try cutting it in half & saving the rest for later. There are 4 of us, so they go fast. I have been know to cook it all up & store them in the refrid. in the back & they stay good for a week. Instant breakfast all week.

Dear CLKENEALY,
The recipe makes 24 & the serving is 24 so the serving size is 1 per serving. They are actually bigger once cooked then they sound as 1/8 cup. LOL. They come out twice the size, fluffy, & thick. I think you will like them. If they are a little bland for you, add more vanilla extr.

I love Bisquick Pancakes. I use light vanilla soy milk. We like our pancakes a bit bigger at our house so I get between 12-16 depennding on what else I put in (i.e. banana, canned pumpkin, blueberries)

I like your idea of the Light Vanilla. I might have to try that. I need to see if I can find it in Japan first though. LOL. As for the fruit, I usually eat a bowl of it on the side. It seems to fill me up more. Plus, I usually double the recipe and add Choc. Chips to the second batch for my kids.
