Ingredients

    1 cup cornmeal
    1.5 cups lowfat buttermilk
    1.25 cups all purpose flour
    1.5 tsp. baking powder
    1 tsp baking soda
    1 tsp salt
    .5 cup sugar
    1 large egg
    .3 cup melted butter, cooled

Directions

Preheat oven to 400
Line or greas 12 cup muffin tin

1. Combine cornmeal and buttermilk in a bowl and set aside

2. In another bowl combine remaining dry ingredients

3. In a separate bowl whisk egg and butter. Add cornmeal mixture and stir well. Add this to dry ingredients and stir until just blended. DO NOT OVERMIX

4. Spoon batter into prepared muffin tin filling each cup 2/3 full.

5. Bake in preheated oven 15 minutes

    Ummmm Ummmmm Good! Made this recipe to finish up a container of buttermilk I bought for another recipe. The buttermilk really helps the overall moisture of the muffin. I eat them with grape jelly. - 3/18/12

    I thought the muffins seemed dense and not very corn-like. I definitely prefer the Jiffy box mix. And when they are 2 for a dollar, they are even harder to beat. We still ate them, just not our favorite! - 1/27/09
