Introduction

Ingredients

    VEGETABLES:
    3 medium Tomatoes, chopped
    1 medium Cucumber, chopped
    1 large Green Bell Pepper, chopped
    1/2 medium Red Onion, chopped
    1/2 cup fresh Parsley, chopped

    DRESSING:
    2 tbsp lemon juice
    1 tbsp olive oil
    1 tsp fresh ground pepper
    1 tsp salt

Directions

Place the vegetables into a medium-sized glass or plastic bowl (do not use metal, it will react to the lemon juice).

In a small bowl, mix the dressing and pour over the vegetables.

Gently toss all ingredients to coat evenly. Serve immediately. We eat this with a spoon to get every drop of juice! (Leftovers become juicy and are a little like Gazpacho without the spice... delicious!)

NOTE: Adding fresh mint or cilantro instead of the parsley is also very good! It is still good if you reduce the salt for lower sodium.

Recipe makes Four 8-oz servings = 32 oz total.

    I really like this salad and it's so easy to make! Since I don't like onions, I did pick out all the red onions. The rest of my household wanted the onions, lol. It is really good! - 6/30/10

    I used 1/4 cup lemon(also made with lime- just as good!) and 2 Tbls olive oil for that amount of salt and pepper. Adding fresh mint or cilantro is also very good! - 9/19/09

    since I don't like fresh onion or bell pepper, I substituted mushrooms and asparagus and enjoyed every drop... put dressing on individual salad at the table so rest could be saved for next meal without going mushy - 6/5/20

    I also add boccocini fresh mozzarella balls. To cut calories for dressing, I use bottled fat free low sodium zesty italian dressing, with pepper. It tastes just as good!! 2nd pic uploaded was my version!!! - 5/15/12

    Loved the recipe, but where is the 593 mg of salt coming from..Yikes... is it from the 1 tsp of salt added. I don't add any salt, just some grated garlic and it is great. I can only give it three stars because of the salt. Otherwise, it would be 5. - 8/8/11
