Introduction

A quick and easy pasta dish perfect for any night of the week. A quick and easy pasta dish perfect for any night of the week.
Number of Servings: 4

Ingredients

    3 cups whole wheat pasta
    12 spears asparagus
    1/2 chicken breast, bone and skin removed
    1-1/2 cups fresh mushrooms, pieces or slices
    1/2 cup low sodium chicken broth
    1 tbsp extra virgin olive oil
    1/4 cup feta cheese, crumbled
    1 medium tomato
    Pinch of pepper, red or cayenne

Directions

Cook pasta according to package directions.
Meanwhile, cut chicken into bite-sized cubes and place in skillet with olive oil.
Cook until partially done.
Add asparagus and mushrooms, continue cooking until chicken is done.
Add chicken broth and cover pan, cook until asparagus is crisp tender.
Add pasta, red pepper flakes (to taste), and feta cheese. Remove from heat.
Serve with fresh diced tomatoes to garnish. Enjoy!

    I made this for dinner today. I took a nice chicken breast cut it length-wise. Also used angel hair pasta (2 cups) it cooked quick & absorbed the flavors. Recommend it for all who are in a hurry & want something great to eat, - 1/7/09

    Overall very good. At first it was a bit bland, but with added garlic, onion, lemon juice, and red pepper flakes, it was quite tasty. Next time, I think I'll make the liquid into a thicker sauce to pour over everything. It contained great flavor, it just wasn't used to its full potential. - 6/3/08

    I loved this, and I love that you can add any vegetables you want to make it yummy. I added yellow squash, asparagus, and carrots. It looked pretty and tasted wonderful. My husband walked into the house and said it smelled like a restaurant. With all of the added veggies, we have a ton of leftovers! - 7/8/09

    I made this last night and my husband and I both enjoyed it. Of course I can never leave a recipe alone so...I added garlic, shallots, 1/4 cup of white wine and 2 tablespoons of fat free sour cream. We thought the sour cream brought the sauce together. Yummy - 7/29/09

    This dish reminds me of one i have had for years. The pasta I use is Orzo (rice like pasta) and i cook shrimp instead of chicken. I sauce is a mix of minced garlic, lemon and lime juice then I saute the shrimp in the sauce. Both meals are super light and delicious! Adding cilantro is great too! - 7/19/09

    This dish definitely needs a spice make over! It's funny! I think most "dieters" are afraid of flavor because flavor means fat or high calorie! Experiment with spices! You can make ANYTHING taste great with spices, herbs and vegetables! SPICE IT UP MY SPARK PEOPLE! - 1/8/09

    I, too, added onion and garlic. Taking heed from MUDDER91, I used 1 1/2 cups dry whole wheat penne and it was still a lot of pasta. Next time I'll use much less pasta (I honestly can't believe I actually said that and meant it!). I also like the sun dried tomato idea! I LOVED this one!!! - 5/21/08

    I used 1/2 chicken breast for each of us and non fat feta (accidently! but it was great). This was a light very summery dish that did not weight me down like many pasta dishes do. My daughter called it a primavera! You really taste the food not any salt or seasonings. - 7/31/09

    This dish was very tasty and easy. My feta cheese got moldy so I used low-fat mozzarella - I think I'd prefer the feta! I also had some seasoned chicken breasts we grilled yesterday so I used those - added nice flavor.Very good! - 5/27/08

    This was amazingly tasty! My wife and kids don't like mushrooms, so I cooked those separately with some minced garlic and added a little olive oil and parmesan cheese to mine. A great recipe that I'll cook again! - 2/10/10

    I love this recipe! After reading all the previous comments, I threw into mine some artichoke hearts and roasted red peppers (as a substitute for the tomato). I also used portabello mushrooms. The one thing that I think I'll add next time to oomph the flavor up even more is some lemon juice/zest. - 1/17/10

    Super easy to make and tastes great! My husband even loved it... and he hates mushrooms, asparagus and whole wheat pastas! I added a little bit of cornstartch to thicken the chickenstock into a sauce for the chicken,veggies, and pasta. - 7/18/08

    This was incredible! I added 5 medium cloves of garlic (chopped) with the chicken when I browned it. I also cut the stalks of asparagus into 3 pieces. I used a whole pound of chicken and the entire bunch of asparagus so I had to increase the other ingredients as well. We sprinkled the feta on top. - 3/8/10

    Wonderful! I would add more chicken next time to up the protein count. I made this with angel hair whole wheat pasta. I would recommend cooking the mushrooms separately because they make the mixture too watery. - 2/9/10

    I liked that this was versatile. I used lots of veggies and I sauteed the tomatoes because they are better for you if they are cooked. It needed a little bit more flavor, so I'll have to experiment with that. - 11/13/09

    Awesome recipe! I'm squeamish about texture so my pasta is vermicelli. It really doesn't seem to matter. The meal was awesome! I added zucchini, onion, garlic and a little low fat sour cream. Definitely a new "go to" meal! - 7/31/09

    This was a little bland the first time I made it, so I tweaked it a bit and used tomato/basil feta and addedd onions and garlic. That did the trick! Great after the additions, but bland as listed here. - 1/7/09

    This was full of a lot of good things, but it tasted very bland..there was not enough flavour for my liking even with adding stewed tomatoes to the sauce. My fiance ended up putting some ranch salad dressing on his. The feta cheese was good though :) - 10/10/08

    This is very similar to a dish I have made for a couple of years now.....only I also add sundried tomatoes and black olives --- and instead of feta cheese I sprinkle grated homemade style parmeson-romano. Excellent either way ! - 1/31/10

    Great versatile recipe. Change pasta, spices/herbs, meats, veggies, cheese, etc. to what you have on hand--can even use rice, quinoa, etc. I do suggest adding onion, garlic, oregano, etc. though as this is a little bland. I always add a bit of nutmeg when I use feta--it just seems to go together. - 1/30/11

    I loved this and thought it was fantastic! I did add a little more chicken since I was cooking for several people. And we used the Ronzoni Vegetable pasta that gives you a full serving of veggies in the pasta! it was delicious! We will make this again. - 1/22/11

    Very Good! I added broccoli, yellow squash, some garlic, and I thickened the sauce with a small amount of cornstarch. Oh, and no feta so I used Parmesan cheese, and cut up a couple of campari tomatoes to put on top right before I served it. - 4/20/10

    I made this with some modifications. I added onions and garlic because they are necessary to life. I used what I had so I replaced the feta cheese with some fresh mozzarella and parmesan. It was a very nice meal with some good flavors. - 4/20/10

    My hubby isn't fond of full whole wheat pasta, so I always use half whole wheat and half regular. That does the trick for him. I also skip the salt in the cooking water but boost non salt seasonings in the sauce. Reducing the amount of cooking water saves energy. - 7/30/09
