Ingredients

    Cream:
    1 1/4 cup sugar
    2/3 cup unsweetned applesauce
    1/3 cup canola oil
    1 large egg
    1/4 cup egg substitute
    1/2 cup lo fat buttermilk

    Mix together:
    2 1/2 cup flour
    1/2 tsp salt
    1/2 tsp cinnamon
    1 tsp baking soda
    4 Tbsp unsweetend cocoa

    Add:
    1 tsp vanilla
    2 cups shredded zucchini

    Top with:
    1/2 cup mini chocolate chips
    1/2 cup chopped nuts

Directions

Mix wet ingredients, add dry ingredients, then add vanilla and zucchini all together. Pour into a 9x13 greased pan. Top with chips and walnuts (if desired). Bake 325 - 350 degrees for 30 minutes.

    If you bake at all you know that most recipes call for 350 degrees. I baked for about 30 min. It came out great - 10/6/09

    This is a yummy recipe and makes a very moist, flavorful cake! I used 1 cup of chocolate chips sprinkled on top of the cake while it was still hot from the oven. After they melted I spread them with a knife so that they made a frosting, and then sprinkled nuts on top of that. - 7/18/10

    a little more information would be great. do you cook it? if so at what temp? for how long? sounds good but I'm not going to eat a raw cake, especially with an egg in it! - 10/1/09

    Bake 325 degrees for 30 minutes - I usually use a glass pan.
