Introduction

Ingredients

    1 cup grated or mashed zucchini
    0.25 cup whole wheat flour
    0.25 cup part-skim mozzarella cheese
    4 tbsp grated parmesan cheese
    1 large egg
    2 tbsp onion
    1 tbsp garlic powder (to taste)
    1 tbsp extra virgin olive oil

Directions

1. In a medium bowl, combine zucchini, egg, onion, flour, parmesan cheese, mozzarella cheese and garlic powder.
2. Heat 1 tbsp oil in a skillet over medium-high heat. Drop zucchini mixture by patties and cook until each side is golden brown.

    These were GREAT!!! I may just make more today. I used a hot pepper cheese...cuz that's what I had... Server these with a little FF sour cream or a little salsa and you've got a meal. My family loved them! - 7/27/10
