Introduction

This has been a great substitute for potato salad for me. This has been a great substitute for potato salad for me.
Number of Servings: 4

Ingredients

    1 large head cauliflower
    5 tbsp light mayonnaise
    1/4 cup milk, nonfat
    6 tsp Splenda
    2 tsp yellow mustard
    2/3 tbsp cider vinegar

Directions

Cut cauliflower into florets.
Mix remaining ingredients together and pour over cauliflower.

    This recipe as is leaves something to be desired. You don't serve potato salad raw! I made modifications by lightly steaming cauliflower (until barely soft NOT mushy!), adding diced celery, onion, chopped egg, & used cream instead of milk to lower carb count.Turned out MUCH better than above recipe! - 11/16/08

    I used to make something similar to this years ago back in the 60's when I first started with Weight Watchers. It was great, and I DID add the normal things like egg and pickles. Dividing it and ate it in several portions. - 3/24/10

    I make a cooked version of this, but figured I'd give it a try. Definately NOT something I'll make again. I want the flavor and texture of Potato salad, not cauliflower with dressing. - 11/16/08

    my sister made this a few years back and it was wonderful she added the celery and some egg same as reg potato salad in fact my nephew was upset after eating two large helpings because he found out and he "does not like cauliflower" lol funny did not mind while he was eating it. - 11/16/08

    I find the exclusion of fats a bit troubling since they are required in any diet and the use of artificial sweeteners is verboten in my house since they create an increased desire to eat. I make this however I use regular products since the quatities are small. Buttermilk will add an addtional layer - 3/24/10

    I used half Best Foos Canola mayo and half low fat sour cream to reduce the calories. Also added an egg, celery and green onion. Yum! This is great at lunchtime. - 3/23/08

    I am confused why people keep referring to it as a mock mashed potatoes recipe.. it says mock potato salad.. i agree that it makes more sense to cook the cauliflower a little before.. - 11/17/08

    A good beginning, but where are the veggies? Pimiento or bell pepper, celery, onion, pickles, eggs - dill, anything you would put in potato salad is great in this cauliflower salad. Oh, and if you are trying to mimic potato salad, then you need to cook the cauliflower - who wants raw potato salad? - 3/23/08

    I absolutely love this. Have had it every week and even made it for Easter. My son liked it too. I also use the "sauce" and mix with a bag of premade cole slaw it is wonderful and even lower in calories (if that is possible!) - 3/23/08

    I didn't call it "mock mashed potatoes" when I served it to my family. Instead I referred to it as a new cauliflower recipe I wanted to try. So no one was comparing it to mashed potatoes and loved it! Hahaha! :-) - 3/23/08

    I tried it with raw cauliflower, somewhat OK will try it again next time with Cauli lightly steamed.
    I used fatfree fromage frais instead of milk and it very creamy

    i had to cook mine, i knew i wouldn't like it raw, so cooked and cooled...green capsicum and celery, and bestfoods mayo (Coz its nice and thick) and added beetroot and a litle juice, most of my kids liked it too - 4/25/10

    I can't imagine eating a 1/4 of a head of cauliflower. Holy Molely!! Maybe the portion size should be looked at. I use shredded and steamed cauliflower as a sub. for rice. Now I can use it here also. Thank you, editors, for directing my attention to this alt. - 3/24/10

    Sounds great for Cauliflower lovers like myself - I keep florets in water in the fridge to munch on- will try this with green onion and shredded carrots and also steam the Cauliflower first - at nearly 82 thought I'd heard it all , diet recipes that is ! - 3/24/10

    If you like it a little softer you can steam the cauliflower for 3 minutes and then cold dip it and drain well. You can also use half & half cauliflower & potatoes when you steam it. More calories but less than conventional potato salad and less carbs too. - 10/8/18

    I have a recipe like this but use some turkey bacon, sliced seedless red grapes,some toasted sliced almonds and a lil handful of reduced fat shredded cheddar. I use reg sugar too like a TBS. Maybe u should call it cauliflower salad..it seems to get peoples panties in a bunch otherwise.. - 7/30/10

    I like this... I didn't have mayo, so I cooked and cut up the cauliflower, the fresh organic eggs, diced up a shallot & mixed this togethe &put in the fridge.     I like the idea - but I would think if you at least blanched the cauliflower so it wasn't raw (potatoes in potato salad aren't raw) it would be pretty good. May try with that modification when I get some cauliflower next week. - 11/16/08

    I love cauliflower but in recent years it hasn't agreed w/ me too well. Nevertheless, I'd like to try this recipe as it sounds great to me! And yes, I think it's supposed to be cooked. Hard to mash raw ones! So...I'll wait and see whether it should get 1 or 5 stars. - 11/16/08
