Ingredients

    1 butternut squash, peeled and cubed
    1 Tbsp butter
    2 tsp brown sugar (more or less to taste)
    salt and pepper to taste
    dash fresh ground nutmeg (optional)

Directions

Boil squash cubes until tender, about 20 minutes. Drain. Mash as you would for potatoes, then add remaining ingredients. Serve hot.

    Loved this! Myself and a family member hadn't had butternut squash until I cooked this and it's a keeper! I cut out margarine and it's still awesome! Thanks!
    For those who find it too hard to peel: microwave the squash for approximately 2 minutes first to soften it.

    One of my favorite vegetables! I use Splenda Brown Sugar and I Can't Believe It's Not Butter". I buy the squash already peeled and cubed at Whole Foods. Makes enough for 5 meals. - 5/18/09

    to make this even quicker/easier - roast the butternut squash whole, then scoop out the seeds and mash. Remember to save the seeds and toast them! yummy portion controlled snack - because there aren't that many! - 11/17/14

    Love this food. I usually use sweet n low and "I can't believe it's not butter" spray for my portion. I prefer it over mashed potatoes. Same thing can be done with acorn squash - 3/3/09

    This is basically the squash recipe I have used for years, but I mash it all without the nutmeg, put it into an ovenproof dish and use a fork across the surface to "stripe" it then I sprinkle on the nutmeg and place it in the oven for about 15 minutes. It comes out gorgeous and delicious.

    With butternut squash I cut it in cubes and microwave. It stays dry so I add butter and that is how we eat it. I make it in a ricer. Loved the recipe when I used no sugar or nutmeg. Ricer makes it smooth. Pat in Maine. - 11/20/16

    Next time I will try this with a different type of squash. Butternut squash was extremely hard to peel, but at least I got two workouts in one day! lol
    Taste was ok, but I'd rather just have broccoli or the easier to make squash and zucchini blend.
