Introduction

Ingredients

    2 tsp coconut oil
    14-16 oz chicken thighs, cut into chunks (OR breasts)
    3/4 cup pineapple juice OR apple juice OR use the leftover juice from canned fruit OR a combination which suits your circumstances
    1/3 cup soy sauce
    2 TBSP coconut palm sugar or honey
    2 TBSP vinegar
    1/4-1/2 teaspoon dry ginger
    1 TBSP minced garlic
    1 TBSP cornstarch, mixed with a little cold water or broth (about 2 TBSP)

Directions

Heat the oil in a 12-inch skillet. Brown the chicken a little bit. Pour the pineapple or other fruit juice into the skillet. Add the soy sauce, coconut sugar, vinegar, dry ginger and garlic. Stir the sauce around the chicken to dissolve the sugar and ginger. Bring the mixture to a boil. Reduce the heat and cover. Simmer, covered for about 10-12 minutes. Add the cornstarch and water mixture. Bring to a boil for about a minute, until it thickens up.

    For a Chinese dish, this wasn't bad. I'm not a huge fan of Chinese, but I will make this again. My husband is a HUGE fan of Chinese, and he said this was better than getting it from a restaurant. - 2/9/09

    This recipe is fantastic. I didn't have ginger or garlic so I made without those. My juice of choice was Dole's Orange Pineapple - used a little less than the recipe calls for and it was perfect. Only problem is that there wasn't enough! - 6/4/12

    I loved this recipie.. My boyfriend who is bravely eating every recipie i find on here loved the recipie, although he was scared to eat it when he seen the garlic ( he doesnt like garlic ) but he loved it, and so did I!!! - 6/25/11

    I made this last night & thought it was amazing! I have never made Chinese food at home that came out THIS good. I only had about 1.5 lbs of chicken so I used half the amount with the same amount of sauce for only 3 people and it came out fabulous with steamed broccoli served over brown rice, yum! - 3/9/10

    This was absolutely delicious. My family loved it. The only difference i made was substituting chicken broth for fruit juice as i didn't have any. I also needed to double the sauce for a bigger meal (except for the vinegar) and did not use ginger. Will be making again. - 4/1/13

    I'm pretty sure I messed up the measurements, which comes with...you guessed it, not actually measuring....and it was a little pineapple intensive, but very yummy all the same. I cubed the chicken before frying it, that saved a little on the cooking time, though I'd to wait for the sauce to thicken. - 6/24/09
