Introduction

This meatloaf presents well when cut, can even use for company! This meatloaf presents well when cut, can even use for company!
Number of Servings: 6

Ingredients

    20 ounces of lean ground beef 7%
    2 extra large eggs
    1 cup Old fashioned Oatmeal (dry)
    1/2 cup Sonny's Sweet BBQ sauce
    1 tsp salt
    1 tsp black pepper
    3T parsley flakes
    2T dry minced onion
    3 small hard boiled eggs
    2 T ketchup
    2T Dark Brown Sugar

    Mix all ingredients except hard boiled eggs, ketchup and brown sugar..
    Divide mixture in half.
    Place half the loaf that has been formed to 4X7 inch loaf on bottom of metal pan.
    Press down the middle to form a gully.
    Place the three small hard boiled eggs in the gully.
    Place the rest of the mixture that has been formed in to a loaf over the top and push together the sides to form a perfect loaf. None of the eggs should show through the sides.
    Make a loaf about 4 inches across and 8 inches long (or use a meatloaf pan).
    Mix ketchup and brown sugar well and brush over the top and sides of meatloaf.



Directions

Bake at 400 for 10 mins and 350 for 40 mins until center reaches 165. Do not overcook.
Take out of oven and let rest for 10-15 mins.
Slice in to 6 servings and serve.

    it sounded a little odd, but it was VERY tasty and tender, and my hubby LOVED it! I added garlic and wocestershire and may add 1/4 cup grated carrot next time like I do in my old recipe (good way to sneak in some extra nutrition for the kids!). Will make again! - 3/25/08

    I made my own version, very similar to this with a few substitutions -- instead of oats, used 3/4 c. Italian bread crumbs, added about 1/4 c. evaporated milk, used fresh chopped shallots in lieu of dry minced onion, added lots of garlic salt & powder, and mixed A1 with the ketchup on top no sugar. - 12/30/09

    Was surprised when I saw this. I grew up with meatloaf that always had hardboiled eggs in the center. The meatloaf recipe is alittle different than how we originally prepared it but it sounds good also. - 4/20/09

    I made this with turkey and did not use the boiled eggs in the middle. Great recipe and very filling my 2 year old and hubby loved it. I do not think I would use the brown sugar on top again though, it was a bit too sweet for me. I will definitly make this again. - 9/28/07

    Wow, different but "GOOD". I threw in some lefteover thawed out sausage (uncooked) and it turned out to be a great meal. I am going to try this again using only sausage and maybe adding some cheese to the top. Can't wait. - 9/21/07
