Introduction

This variation is made with silken tofu. It has all the flavor of the original, with no cholesterol, plus the nutritional benefits of soy protein. This variation is made with silken tofu. It has all the flavor of the original, with no cholesterol, plus the nutritional benefits of soy protein.
Number of Servings: 8

Ingredients

    Crust:
    1 1/2 cups fruit-sweetened chocolate cookie crumbs (fat free Devil's Food cookies)
    3 tbsp soy margarine

    Filling:
    2 cups soft Silken Tofu
    3/4 cups sugar or natural sweetener
    1/2 cup unsweetened cocoa powder
    1 tsp vanilla extract

Directions

Put cookie crumbs in the bottom of a lightly oiled 9" pie pan.
Add melted soy margarine, and toss with a fork to blend. Press crumb mixture to the bottom and up the sides of the pie pan.
Bake for 5 minutes to set.
Remove from oven and let cool.
In a blender combine remaining ingredients and process until smooth.
Pour filling mixture into the crust.
Refrigerate for 2 hours before serving.

    This was very good, but I couldn't get it to the right consistency using a hand mixer. Also, it needs a little something else... maybe some raspberry extract mixed in, or sauce on top. Definitely a little whipped cream. Overall, a very good recipie I will definitely make again! - 2/5/09
