Ingredients

3 cups All-Bran cereal (the kind that looks like sticks)
    2 cups water
    2 egg whites
    1 tsp vanilla
    3/4 cup flour
    1 1/4 cup sugar
    1/2 cup cocoa powder
    1 tbsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    2/3 cup chocolate chips

Directions

Mix cereal and water then set aside until all liquid is absorbed. Combine cereal with remaining wet ingredients. Combine all dry ingredients in a medium sized bowl. Stir in wet ingredients. Mix with an electric mixer until well combined. Stir in chocolate chips. Divide among 24 muffin cups. Bake at 325 for 18-20 minutes.

My muffin papers are really small. That's how I get 24 muffins out of this recipe.
I found my error in the recipe and have fixed it. Thanks for all of the comments and I'm glad you like this.

This was a great muffin recipe. I used Fiber One cereal instead of All Bran. One note - use only 1tsp of baking powder, not the 1 tbsp in the recipe. I only made 18 muffins - trying to get 24 was really tough. - 7/13/08

Decadent! More like cake than a muffin! I used only 3/4 cup of sugar. I got 28 muffins out of this, but my tins are quite shallow. - 1/25/13

I bought Ezekiel Cereal & didn't like it! So I used it up in this recipe instead of the All bran cereal. I used 1 egg rather than 2 egg whites, .5 Tbsp of baking pdr, and a half & half mixture of cocoa pdr & carob pdr. Left out the choc chips & cut the amount of sugar in half. Made 18 muffins. - 5/1/10

These muffins were very tasty. Mine didn't rise very much, but I halved the rec. for 1st time making and maybe I didn't put enough of something in. - 2/16/09

I used All Bran buds and had to increase the water to 2 1/2 cups. I also used Hershey's Special Dark Chocolate chips and made them into mini muffins for a pint sized chocolate fix. 72 mini muffins made with the changes I did yeild 40 calories per serving. Good recipe and I will make again. - 1/25/09

I' ve made this several times...it is a 'go to' for times when I need a serious chocolate fix. For my version, I also add 1 tsp. chocolate extract and use sugar free chocolate chips. Also, mine make 12 muffins so I adjust the calories accordingly. Worth every calorie! - 6/2/08

Simply the best! Although I had trouble diviing the batter into 24 muffins. They where very tiny. Also the calorie counter thing gave me about 97 calories also and it was with the "Fiber One" ceral too. Hmm. Very yummy though. Will make again. - 1/17/08

Made these while having a chocolate craving. Very satisfying. definite "do again." yet, the calorie calculator gave me 97 calories each (and that was even with "Fiber One" which has less calories than "All Bran.") - 5/10/07
