Ingredients

    8 chicken thighs, bonless skinless
    3 cups low fat chicken broth
    1 tbsp olive oil
    1 onion
    5 cloves garlic
    1 tsp turmeric
    1 tsp cinnimon
    1 tsp cumin
    2 tsp raw ginger chopped fine
    1/3 cup diced dates
    1/3 cup dried apricots
    1 fresh lemon juiced
    2 to 3 tbsp cilantro chopped

Directions

Brown chicken in olive oil then remove to plate. Add spices including ginger to pan to lightly toast (watch carfully, do not burn). Add onion and garlic and let saute until translucent. Add dates , appricots and reserved chicken to pan then pour all of the chicken broth over and stir. Bring to a simmer, cover and simmer 40 min. Just before serving add lemon juice and choped cilantro. Serve with rice or couscous.

    Absolutely fabulous taste that the whole family loved (kids 12, 10 & 5 asked for seconds)! I added a can of chick peas. At the end of cooking, I removed the chicken and pureed the sauce with my hand blender. Thickened the sauce and managed to sneak extra protein into the kids & hubby. - 1/25/12

    LOVE this! I must confess that I made a vegan version, using 3 cans of chickpeas instead of the chicken. I'll do it straight next time when I'm not at my vegan son's house. It's definitely worth a place in the regular rotation! - 4/27/13

    This dish tastes more like an Indian inspired chicken soup with couscous than actual chicken korma. I suppose it was wishful thinking on my part to think that something so low fat could actually taste like the real thing.

    This was amazing! I normally don't like cinnamon in my salty dishes, but it was so subtle and blended perfectly with the other flavors. I had a few days of leftovers, and it gets better over time! - 3/7/08

    Very disappointing! This turned out nothing like the picture! It was sooooo runny even after I added a corn starch slurry! The lemon juice at the end killed all the lovely Indian spices and it just tasted like lemon chicken. I will not make this again. - 10/3/19

    This is insanely delicious! Next time I'll sprinkle cilantro on each serving instead of adding it to the pot. Served it over brown rice. Yum! Leftovers were great in a "burrito" (w/ whole wheat tortilla, brown rice, fresh spinach, a little Greek yogurt). - 9/26/10

    Although it doesn't taste exactly like the korma I get at Kashmir, this was an excellent lower cal/fat alternative that I'll be making EVERYtime I am wanting the Indian taste. I made mine in a pchef covered baker and added chick peas so that might be the difference in the sauce, but it was so easy - 9/5/10

    Very good; but I'd like to try to bake the thighs on a rack first to eliminate more of the fat even though I tried to remove most visible fat before frying...or maybe try breasts....But the spices, apricots and dates, etc. are just so tasty. - 4/19/09

    I made this for the people at work. It is very good. I think next time I would add more dates. They seemed to just disappear. I used Chicken Breasts and the cilantro Really made the dish. I didn't put the lemon. Use a BIG pan. I had to transfer mine to a bigger pan during the cooking process. - 2/16/09

    Try it with the lemon, it really brightens the dish and off sets the sweetness.

    I did this recipe with chicken breast. I did not have any turmeric, nor cilandro in the house and forgot to put the lemon juice in the end. Served it with couscous. Boy, it was delicious! My FI told me my food could be easily served in a restaurant. Thank you for sharing! Now he thinks I'm a chef :) - 2/15/09
