Introduction

This is my Mom's cheesecake. It's thick and delicious. This is my Mom's cheesecake. It's thick and delicious.
Number of Servings: 8

Ingredients

    Crust:
    Keebler graham cracker crust

    Filling:
    2 packages Neufchatel Cheese
    1/2 cup sugar
    1/8 tsp salt
    1 tablespoon flour
    1/2 teaspoon vanilla extract
    2 eggs
    1/2 cup light sour cream

    Topping:
    1 can cherry pie filling (separate out the cherries from the syrup)
    1/2 cup light sour cream

Directions

Crust:
You can make your own graham cracker crust, or just use a premade one from Keebler.

Let the cream cheese sit out to soften.
Beat it and add the other ingredients. Add the sugar slowly and then add the eggs at the end, one at a time.
Bake for 45 min - 1 hour at 350.
Cool for 1 hour on rack.
Cool for 3 hours in refrigerator.

Topping:
Combine 1/2 cup light sour cream with 1/2 cup cherry pie filling syrup. Spread over the cheesecake. Place cherries (without any sour cream) in a circular pattern, or just heap them up in the middle of the cheesecake.

    This recipe was easy and delicious. My son made it for his first time making cheesecake. This was the only dessert at Thanksgiving dinner that was gone before the evening was over. We didn't use the cherry topping. It was still great plain. - 12/8/07

    Soooooooo good! I made a chocolate version (stirred in hershey's special dark cocoa powder, and used a premade oreo crust). Also, I reduced calories by using fat free cream cheese and splenda. Still not low-cal, but soooo heavenly, for when you need a real treat!!!! - 10/18/07

    Very Good
    This was probably the best cheesecake I've ever had that wasn't super sweet. It was also the first one I've made myself. I couldn't give 5 stars because I didn't use the topping, and I added 1/2 tsp lemon juice and an extra 1/2 tsp vanilla (with another 1/2 tbs flour). Overall, tasted GREAT! Thanks - 8/20/11

    My 14 year old daughter made this for our New Year's eve party and it turned out wonderful. I will have to remember next time to add a pan with water under the cake pan to keep it from cracking - but it was delicious! She said "Mom if this is so easy to make why don't we make it all the time" LOL - 1/4/10
