Introduction
This is a great cold shrimp soup. A favorite in our house!! Had this in a mexican restaurant and had to come home and re-create it myself. I actually think my version is better than theirs. I also add jalapenos or 1/4 cup prepared horseradish on occasion. This is a great cold shrimp soup. A favorite in our house!! Ingredients

2 pounds cooked shrimp, peeled and deveined
1 tablespoon crushed garlic
1/2 finely chopped onion
1/4 cup fresh cilantro, chopped
32 oz tomato and clam juice cocktail
1 lemon's juice
1 teaspoon hot pepper sauce, or to taste
salt to taste
1 ripe avocado - peeled, pitted and chopped
1 cucumber - peeled and finely chopped
2 Roma tomatoes - finely chopped
Directions
1.Place the shrimp in a large bowl. Stir garlic, onion, cucumber, tomatoes and cilantro. Mix in tomato and clam juice cocktail, lemon juice and hot pepper sauce. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.
