Ingredients

    1 lb 93% lean ground turkey
    Red, Green, and Yellow bell Peppers
    Medium Onion
    1 Can black beans
    Mexican seasoning
    Cilantro
    Jane's crazy mixed up salt (or seasoning salt)
    Black Pepper
    Whole wheat burrito wraps
    shredded cheese mix
    salsa
    Sour Cream (optional)

Directions

Combine Turkey, Onion, Peppers, black beans, and seasoning in a large skillet. Cook until Turkey is done. Put turkey mix in Burritos, sprinkle with cheese mixture, wrap burritos. Place Burritos in a large glass baking dish. Cover with Salsa and cheese, Bake at 375 for 10 minutes. Top with Sour Cream if desired.

    Just made this. YUMMY I even used the left over meat mixture and stuffed 4 green peppers (made a double batch) Instead of using rice, I used the beans. - 10/11/09

    Very Good. I would cook the turkey and drain the grease before seasoning. And I didn't use all the liquid from the black beans. I also added garlic. This is a great recipe that is so versatile. If using fresh salsa, drain most of the liquid prior to topping the dish. I would make again! - 9/10/09

    This dish was a hit with the family - the kids loved it. Used refried pinto beans instead of black beans, 2% cheese, doubled the ground turkey to fill more burritos and extra protein (added calories too unfortunately) - made 9 burritos, left out peppers and cilantro because I didn't have them. - 10/19/09

    Read some of the other reviews tried to keep the sodium to a minimum but with the ingredients listed it was a little hard. Some times you just have to wing and I used low sodium seasions and it came out ok. - 4/16/19

    I altered the recipe a bit but it turned out fabulous. I added corn as someone else had suggested, and instead of the mexican spices, I added a can of diced tomatoes with green chilis.     Very Good! Instead of buying a mexican seasoning I make my own with 1 Tbsp of Mrs. Dash Chipotle seasoning, a couple sprinkles of Garlic Powder and 1/2 tbsp of Chili powder. Added lemon an lime juice to taste. I also make my own salsa so that cuts down on more of the unwanted stuff. - 9/20/10

    Made a much lighter version of this omitting ingredients 3-6 and 9, but still loved it! Just cooked turkey w/ sauteed onion and sweet red pepper w/ a few dashes of taco seasoning. Filled 6 Flat-Out Light Spinach wraps w/turkey mix and topped w/ salsa and fat free sour cream.
