1 lb 93% lean ground turkey
Red, Green, and Yellow bell Peppers
Medium Onion
1 Can black beans
Mexican seasoning
Cilantro
Jane's crazy mixed up salt (or seasoning salt)
Black Pepper
Whole wheat burrito wraps
shredded cheese mix
salsa
Sour Cream (optional)
Directions
Combine Turkey, Onion, Peppers, black beans, and seasoning in a large skillet. Cook until Turkey is done. Put turkey mix in Burritos, sprinkle with cheese mixture, wrap burritos. Place Burritos in a large glass baking dish. Cover with Salsa and cheese, Bake at 375 for 10 minutes. Top with Sour Cream if desired.

This dish was a hit with the family - the kids loved it. Used refried pinto beans instead of black beans, 2% cheese, doubled the ground turkey to fill more burritos and extra protein (added calories too unfortunately) - made 9 burritos, left out peppers and cilantro because I didn't have them. - 10/19/09

Delicious and quick!
Made a much lighter version of this omitting ingredients 3-6 and 9, but still loved it! Just cooked turkey w/ sauteed onion and sweet red pepper w/ a few dashes of taco seasoning. Filled 6 Flat-Out Light Spinach wraps w/turkey mix and topped w/ salsa and fat free sour cream. - 4/18/08
