Introduction

A sweet and crunchy taste for this terrific chicken dish. A sweet and crunchy taste for this terrific chicken dish.
Number of Servings: 6

Ingredients

    1 lb. boneless, skinless chicken breast (cut into six pieces)
    1/2 cup halved pecans
    1/4 cup plain bread crumbs
    1 tsp pepper
    1/2 cup reduced calorie syrup

Directions

Preheat oven to 350 degrees.
Line a baking sheet with parchment paper.
Put the pecans and bread crumbs into a food processor. Combine until all of the pecans are chopped into the same consistency as the bread crumbs.
Put into shallow bowl.
Put the syrup into a bowl.
Put the chicken into the syrup, coating both sides completely.
Put the chicken into the pecan and breadcrumb mixture.
Coat each side completely.
Lay the breaded chicken on the prepared baking sheet.
Coat the rest of the chicken pieces.
Bake for 30 - 35 minutes, or until all of the chicken is cooked through.

    This reminded me of the pecan-crusted chicken that's in all the chain-restaurant salads these days, so that's what I did. Served on a mix of romaine and spinach with dried cherries...yum. Kids liked it too, but plain. - 5/14/08

    Oh this was GREAT! Mine came out pretty crispy and sweet, but i seasoned thie chicken so it had a spicy,sweet taste. This was a big hit i know i'll be making this again soon. - 4/2/08

    I liked this and so did my hubby. I did make a few changes though...I added a few herbs and spices to the nut mixture, omitted the bread crumbs and just put the nut mixture on top of the chicken to keep it from getting mushy. The serving size needs adjusting, 6 servings for 1lb is a stretch. - 6/13/08

    This recipe really caught my interest! I used pure Vermont maple syrup and cracker crumbs instead of bread crumbs. It came out nice and crunchy on the outside and juicy on the inside.     Made this one by not just putting on cookie sheet, I covered with foil for the first 20 to 25 minutes then uncovered for the remainder of the time to make the outside of the chicken crunchy. It keeped the chicken from drying out o much - 2/28/08

    I used HONEY instead of syrup. I used Ritz crakcer with the pecans in the food processor. 25 min. and the meat was very tender. My husband gave it a 7 out of 10. I gave it a 10. - 3/7/08

    This was really good! I made a few small changes - I didn't cut up the chicken but just pounded it out a little, instead of dipping the chicken in the syrup I brushed a good coat on, and I used hazelnuts instead of pecans. Very delicious & easy to make! - 3/13/07

    This was okay. I've made a version of this from a Rachael Ray recipe that had a bit more seasoning (and therefore, flavor). This is a promising variation, but needs work. The Rachael recipe uses the syrup as a dipping sauce; combining it with balsamic and dijon mustard would be a nice combo. - 2/29/08

    I pulled the pecans out of the freezer so they kind of made a paste instead of crumbs...it was kind of a mess, but it still turned out to taste pretty good! Next time I'll make sure the pecans are at room temp. - 5/4/08

    I made this last night and was actually impressed. I liked the uniqueness of having a sweet taste to the chicken. And it was pretty easy to make. I paired it with some garlic butter and rosemary seasoned broccoli and a recipe for garlic bread from this site as well. My hubby & I both enjoyed it! - 3/26/08

    This was really tasty. I used suggestions from several different comments: I seasoned the chicken with Cajun seasoning to give it a spicy/sweet mix, and heated my frozen pecans in the micro to prevent stickiness in the blender. Amazing! - 4/21/10

    I think you have to be ravenous to get into this recipe. It is incredibly (underline that twice) rich-tasting, and therefore, a bit over-the-top in sweetness for my taste. However, mine was not dry in the least and is definitely the most unique recipe I've tried. - 6/11/07

    Awesome - I really enjoyed this I cut the chicken into strips and served it like chicken fingers. I also used 1.5 LB of chicken and found I had enough coating. I cooked it covered part of the time but next time i would not cover it at all to make it crispier. - 1/23/10

    Was very good. I used the parchement paper and the bottom of the chicken was a bit soggy so next time I think I'll try turning the chicken over half way through the cooking time and see if that doesn't help. Paper does help in the clean up process though... :o) - 12/21/09

    I made this for company last night and enjoyed it. Hubby says he liked it but not as much as some others I make. Our guest liked it very much and wanted the recipe. I didn't have pecans so I used walnuts and panko crumbs. I will make this one again. - 12/8/09

    I didn't have a food processor so I just sprinkled some pecans on top. It was a big hit with my picky kids! I also had something similar to this in a resturant where they added a smoked guoda cheese sauce on top but I liked it very much without it. - 5/8/08

    Awesome! I used 1/4 cup of regular syrup (which was plenty) so DH would eat. It did not state where to add pepper so I tossed in with the pecans and panko (used rather than bread crumbs) but only used 1/2 tsp of coarse pepper and it was the perfect amount with just a hint of spunk.     I did like this but it was a little too dry. I used honey instead but I think I should have added more. I also mixed walnuts and pecans which made for more of an interesting flavor and crunch. Very good and very easy. Great to use over salad as well. - 5/7/10

    will try this tomoro. maybe season chicken a little with salt and maybe crushed red pepper first for extra zip or use egg whites to make crumbs stick and dip in maple mustard combo. I always use panko bread crumbs a lot crunchier and always crispy no matter what you dredge in - 3/21/10
