Ingredients

    1 1/4 cup flour
    3/4 cup corn meal
    1/4 cup sugar
    2 teas baking powder
    1 cup skim milk
    1/4 cup oil
    1/4 cup egg beaters

Directions

mix dry ingredients then add wet, mix until everything is wet.
12 muffin cups
400 for 15-20 minutes

    This is the recipe on my Quaker corn meal box, except they use either 2 egg whites or one egg. We really like this recipe. It is a bit sweeter than the Jiffy box mix. - 3/21/11

    great! better than the recipe on the cornmeal container! I used one regular egg because I didnt have egg beaters though! Used spray butter to eat it so it wasnt dry! YUM YUM - 1/19/11
