Ingredients

    1 can of pumpkin
    any cake mix

    especially good with chocolate or spice. You can't even taste the pumpkin.

Directions

bake according to cake directions. do not add any other ingredients. I have baked in cupcake or fluted tube pan, and both are wonderful. I like with no icing, but they are good dusted with powedered sugar.

    Someone made the comment that you cut the oil and water "slightly" in this recipe. The idea is to REPLACE the oil, water, eggs, anything liquid from the cake mix instructions. It's only cake mix and pumpkin. No oil, eggs, water, sugar, nuthin...that's how you get the low fat/calories of this cake. - 10/8/10

    To those who are wondering how much pumpkin to add: I did a bit of detective work. I clicked on "Full nutritional breakdown" in the Nutrition box to see the recipe by ingredient. It says it calls for 0.17 cups per (12) servings. 0.17 x 12 = about 2 cups, so it's probably a 15 oz. can. Looks yummy! - 10/18/14

    I canNOT stop eating this cake!! Super moist, super yummy! I used 14 oz can of pumpkin, 1/2 cup water, 1/4 cup each of dried cranberries & golden raisins. Next time I'll try 1 cup water to see if it's fluffier (less brownie-like) & add chopped nuts, too. Somebody come over & take away this cake!!! - 10/12/08

    I didn't want to add frosting to this cake so I crushed up 1 cup of Cinnamon Toast Crunch cereal and sprinkled it over the top before baking it. Cake came out moist and delicious with a delicious crunch, cinnamon-y top! It was great! Proud of myself for coming up with a great topping, too! LOL

    I use to make these all the time, my son was allergic to dairy I found Duncan Hines Yellow cake mix doesn't have dairy in the mix and so this was an easy recipe and economical. No egg, milk, oil. Just the can of pumpkin. Family favorite. - 1/13/13

    I agree with Nancy-Girl, the batter was thick, more the consistency of brownies. Next time I will adjust the consistency by adding water.
    I used a white cake mix and added pumpkin pie spice and dried cranberries. Tasted awesome.

    Made this tonight using a butter pecan cake mix. I added 15 oz can of pumpkin to the cake, about 2 T water and the typical pumpkin pie type spices to jazz it up. I used my mixer to mix - only until blended. Turned out great with terrific fall flavor and a light texture. Drizzled with icing. - 10/16/12

    Ok, got this recipe from a friend, but didn't have pumpkin and used apple sauce the first time. That was good, too.
    Have made many times with pumpkin and with applesauce depending on which I had when I had to take goodies to places. I usually get 30 cupcakes out of a recipe, so each is 60 cal.

    This was a little crumbly on the outside. Maybe because I made it in a loaf pan? But it was moist on the inside and gave me the pumkin bread satisfaction I was looking for without all the fat of my traditional recipe. - 10/3/11

    Made this with a yellow cake mix. Added a 14 oz can of packed pumpkin, 0.5 cup water, and 3 egg whites. Spiced it up with some cinnamon, cloves, nutmeg, and ginger. Yummy! Will definitely make again. - 4/22/11

    Awesome! I made cookies with chocolate cake mix. I got 33 out of 1 box of cake mix. I did add 1/4 cup of water to thing the batter a little. I have also tried it with the Fiber one muffin mix. It was great, but beware of side effects of fiber. Great find, these are always ingredients I have on hand. - 1/25/10

    Very Good
    I used marble cake and added 1 cup of water as many suggested. I made it in a fluted pan and it came out perfect! Very moist, but definetly still very much a cake (was not flat as some people said it was). I just slightly dusted with icing sugar and everyone, including the kids, loved it. - 10/12/09
