Ingredients

    1 butternut squash
    olive oil cooking spray
    mrs. dash seasoning of choice

Directions

wash and peel the skin from the butternut squash.
cut into 'fry-like' strips or you could even crinkle cut them if you have those scissors
spray your cookie sheet with cooking spray and spread out evenly. sprinkle on your choice of seasonings (i like mrs. dash garlic and onion).
bake at 375 for 35 mins flipping sides over halfway through.
*watch these carefully as they have a tendency to burn in sensitive ovens if left in too long!

serve with ketchup and eat just like french fries! it sounds strange... but they are amazing!

    Butternut baked fries are the BEST. I put them in a baggie with olive oil, garlic, pepper, and chipole peppers, toss, put on baking sheet 400 degrees for 25 minutes and enjoy them!! - 10/14/08

    My these tonite, but put them in a baggie with olive oil, ground cinnamon and nutmeg baked them for 25 min and put under the broiler for 3 min and I liked to not got any of them my 18 yr old was eating straight off the pan! He said told me to buy more squash next time. lol - 12/5/12

    i used cubes of squash already cut up - mixed in a baggie with 1 T olive oil - baked at 400 and turned them every 10-20 minutes. I let them cook for almost an hour and they carmelized - turned the heat down to 350 as they were getting too charred. Took a long time but tasty. - 2/17/12

    These were wonderful! I baked at 400 for about 20 minutes and turned broiler on low for the last 10 minutes. Be sure to cut the squash like a shoestring fry. The thinner the crisper they'll be. - 7/13/09

    Oh my goodness the flavor is great! I semi-froze them before baking thinking that would do something good to them but I think it just slowed the cook time down. I really do feel as indulged as if I had ate McD's. There's just something so savory and complex about the flavor. Good job! - 3/29/11

    This recipe was so good! I will definitely make this again!!! Thanks for posting this recipe. I was trying to find a new way to prepare butternut squash. I added Badia seasoning, olive oil, and a lil Splenda to them and shook them in a Ziploc bag and bake them as indicated. DELICIOUS!!! - 4/11/12

    I love butternut squash fries. Have not tried with the ketchup yet, but planning to do that today. After spraying with olive oil, I add a little red pepper to mine. These squash fries with my Morningstar Farms Meatless Buffalo wings are my favorite meal. - 1/25/12

    Excellent! I made some Butternut Squash soup the other night and had a lot of leftover squash. I cubed it and put it in the fridge to use later, when I figured out how! So my fries were oddly shaped, but delicious! Excellent idea! - 11/6/10

    I was nervous to try them...but they ended up pretty good! Filling,tasty, and satisfied the "fry craving" I blended some suggestions (the bag w/seasoning and olive oil to coat them and the broil for the last 10 min) and they came out great.     I love butternut fries. Make them all the time. I nuck the sqash in the microwave just for a few minutes...makes it much easier to cut and peel. Once you get this mastered its so easy to do. I also use the course salt on mine but will try the mrs. Dash! - 6/21/11

    Made these this evening and they were awesome! This recipe worked really well.

    Definitely need to cut them into -even- pieces for them to cook evenly tho ;) Also, isn't this squash really high fiber?
