These delicate crepes are almost too pretty to eatbut they're a snap to make! They also deliver a whopping 31 grams of protein per serving.

Ingredients

    1/2 cup egg whites (4 large)

    1 scoop protein powder (mine is 90 calories, 17g protein, no added sugar)

    Splash of water

Tips

Serving suggestions: Fill with sweetened pumpkin puree, ricotta creme, fruit compote, etc. Top with maple syrup, fruit coulis, fresh berries, vanilla Greek yogurt (for even more protein!) or no-sugar-added syrup. Note: Garnish ideas not included in nutrition facts.


Directions

Blend water and protein powder briefly.

Combine with egg whites.

Pour 1/3 of the batter in a nonstick pan (spray pan with no-stick spray if necessary). Cook until bubbles form. Flip, cook 10 more seconds. Repeat with rest of batter.

Makes 1 generous serving of 3 crepes.

    OMG! This are really good. Quick and easy too. I filled them with blueberries and strawberries then drizzled with honey. the protein powder itself is also sweet. - 5/22/13

    I've been trying to increase my protein intake, and this will be one of my "go to" recipes. I heated blueberries and blackberries in the microwave and topped the crepes with Fage Greek yogurt and the berries to make a quick and filling lunch. - 7/15/13

    I used my strawberry protein powder, wouldn't recommend it. Next time I think I'll try it with vanilla protein powder. For topping I added honey. I also found four egg whites to be too much but that may be because I use extra large eggs so I only used three. Will make again. - 8/18/13

    i have made a crepe similar to this and mixed the batter in my personal blender. no problems with clotting while cooking. and i used two different protein powders each time i made them. ;) - 5/21/13

    Super easy and very versatile! I have been using these for as a low carb replacement for flour tortillas and they are excellent! If you need something a little thicker for heartier foods, just make 2 crepes instead of 3! I also add savory seasonings to them. Yum!!! - 3/11/15

    Loved these! Quick and easy. I used eggbeaters because that is what I had on hand. Spread with a thin layer of peanut butter! Can't wait to try these out in a lot of different forms. Would make for a great wrap sandwich too. I did use a little bit of butter in making them and found it worth it :D - 1/14/14

    This looks promising, but don't you have problems with the protein powder clotting? Perhaps it's the one I use, but anytime I cook it, it kind of clots up and doesn't taste very good... - 5/31/11

    Absolutely amazing and low calorie and low carb and high protein!!! I struggle to get enough protein, and this was a great breakfast. I added a tiny bit of vanilla in the batter and I used vanilla greek yogurt and strawberries on the inside. Absolutely amazing! Next time I'm going to try putting so - 2/28/17

    Delicious and filling!! I mix 1/4 cup of cottage cheese & 1-2 tsp of fruit preserves together and use it as a filling for the crepes. You must try this addition if you like cottage cheese.....amazing!!!! Wonderful breakfast or snack for the low carb diet. - 9/8/16

    I used Casein vanilla blend so it was a lil bit thicker. It gave it a lil bit of sweetness to it. It was good. Definitely low in calories (depends on what protein mix you use lol) - 4/20/15

    Tried this recipe and found that it asks for far too much egg for most protein powder scoops. I used 2 eggs for a scoop and still found it had too much egg. It may be necessary to experiment a bit to find the ratio that works best for your egg/protein mix. - 4/15/15

    These are awesome! Mine (made with NOW Pea Protein Powder) turned out a little thick (more like pancakes), so next time I'll add more water and/or use less batter per crepe.

    I've been searching for ways to use protein powder, and this is the first actually tasty recipe I've found. Yum!
