Number of Servings: 18

Ingredients

    1/3 cup unsweetened applesauce
    2 TBSP almond paste
    1 TBSP flaxseed oil
    10 packets Truvia (or 3 TBSP)
    1/4 cup agave nectar
    1 large egg
    1/2 tsp vanilla
    3/4 cup whole wheat flour
    1/2 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    1/4 tsp black pepper
    1/2 cup vanilla whey powder
    2 cups oats
    1 cup dried cherries
    1/2 cup sliced almonds

Directions

Heat oven to 350 degrees. Beat together
applesauce, almond paste, flaxseed oil, truvia, and agave nectar. Beat in egg and vanilla. Mix well, Add flour, baking soda, salt, pepper, and whey powder and thouroughly mix. Stir in oats, cherries and almonds. Divide dough in to 18 equal pieces and place on greased cookie sheet, flatten with spoon. Bake 16-18 minutes or until brown. Remove from oven, cool and store in a plastic container.

    I enjoy this cookie. I am not a baker, but these weren't that bad to make. I suggest slightly melting the almond paste about 20 seconds. It mixes well. I used 5 Splenda packets and not Truvia. Also I used fresh blueberries instead of cherries. My husbands and friends loved them. - 9/12/12

    I love these cookies. Maybe because I've gone 17 days without any carbs but wow they are great. I was nervous to make them but happily suprised. I used dried cranberries not cherries because I couldn't find them. Will make again! - 3/2/12

    I baked for 12 min. at 350 degrees to avoid the cookies drying out. They do NOT spread as normal cookies do. Good and a welcome treat after 17 days of no carbs! - 9/8/11

    I would not recommend "melting" the almond paste. It has the effect of cooking it. Patience in mixing the almond paste as is will be rewarded. Craisins may be substituted for the dried cherries. - 8/30/13

    Instead of almond paste, I use peanut butter. Also, the cookies will burn if baked for 16 -18 min. Instead, bake for only 10 min! - 6/24/12

    I used almond butter because I couldn't find almond paste, so they were not quite sweet enough. I might also add a bit more applesauce next time to make them more moist. Finally, I didn't have quite enough dried cherries, so I made up the difference in prunes which I chopped up. Filling and good! - 9/4/11
