Ingredients

1/3 cup unsweetened applesauce
2 TBSP almond paste
1 TBSP flaxseed oil
10 packets Truvia (or 3 TBSP)
1/4 cup agave nectar
1 large egg
1/2 tsp vanilla
3/4 cup whole wheat flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp black pepper
1/2 cup vanilla whey powder
2 cups oats
1 cup dried cherries
1/2 cup sliced almonds
Directions
Heat oven to 350 degrees. Beat together
applesauce, almond paste, flaxseed oil, truvia, and agave nectar. Beat in egg and vanilla. Mix well, Add flour, baking soda, salt, pepper, and whey powder and thouroughly mix. Stir in oats, cherries and almonds. Divide dough in to 18 equal pieces and place on greased cookie sheet, flatten with spoon. Bake 16-18 minutes or until brown. Remove from oven, cool and store in a plastic container.

I used almond butter because I couldn't find almond paste, so they were not quite sweet enough. I might also add a bit more applesauce next time to make them more moist. Finally, I didn't have quite enough dried cherries, so I made up the difference in prunes which I chopped up. Filling and good! - 9/4/11
