Ingredients

    3 medium zuchini (summer) squash
    1 egg white
    1/3 cup whole wheat bread crumbs
    2 Tablespoons parmesan cheese
    cooking spray
    1/4 tsp. garlic powder
    Salt and pepper to taste

Directions

Preheat oven to 425 degrees.

In a small bowl beat egg whites with salt and pepper. In plastic bag, place bread crumbs, garlic powder and cheese and shake well. Spray cookie sheet with cooking spray and set aside.

Dip zuchini in egg whites, then bread crumb mixture and shake to coat. Place breaded zuchini in single layer on cookie sheet and spray more spray on top. Bake at 425 degrees for 20-25 minutes, or until golden brown.

Serve with marinara sauce for dipping. (Quick sauce: tomato sauce/paste/puree mixed with Italian seasonings to taste)
