Italian Pinoli Cookies for a special holiday treat.

Imported, 70% Amedei chocolate wrapped in luxuriously creamy peanut butter cookie dough then gets enveloped in a chocolate - espresso cookie wrapper before being baked. It takes some time, and a little effort, but it's worth it! The resulting treat is nothing short of decadent, and insanely rich... tread lightly!

An Italian favorite, My Grandmother made these every Christmas for us. They have been a tradition handed down. I needed to know the carbs for them as my son is Type 1 diabetic and we have to count every carb he eats. So I put in the ingredients and now I know. I was pretty close with my guess. I guessed 12g for each cookie.

Not a good choice if you have egg or gluten allergies :).

As good as Grandma's Italian cookies

flour, sugar, crisco, orange rind, lemon rind, cocoa, baking powder cinnamon, cloves, vanilla, coffee

Gluten free, it is good sometime when i make egg custard and have left egg white.

Great topped with chocolate

Smooth, creamy cottage cheese is the base for these crisp-chewy, chocolatey ring cookies. A sprinkle of coarse sugar adds crunch.

My invention of the Italian Almond cookie using Nature Sweet (maltitol.) NOT LOW CAL. These are very chewy and best to eat when completely cool.

Great with coffee or tea - not too sweet!

1 cookie = 1 WW point

This is a recipe called Canestrelli di Crocefieschi.
Crocefieschi is a nice, little town in Liguria, the region where I came from.
Hope you like them, they are simple and very good.

Arthur's Bakery in Medford MA and my Nana's Anise cookies are a holiday tradition. Anise is the flavor of licorice. Add as much or as little as you like.

I have some Almond flour that I needed to use and found this recipe. They are a very sweet cookie. Very good.
