Introduction

Ingredients

    • 2 tablespoons olive oil
    • 3 cups shredded red cabbage
    • 1 1/2 cups peeled, shredded red beets
    • 1 medium onion, thinly sliced
    • 1 large apple, grated
    • 1/2 cup apple cider vinegar
    • 2 tablespoon brown sugar
    • 1/2 teaspoon ground allspice
    • pinch of salt
    • pinch of pepper

Directions

1. Mix the apple, vinegar, brown sugar, and spices in a bowl.

2. Heat the oil in a large skillet or wok. Stir fry the onion and cabbage until they just start to get soft.

3. Add the beets and the apple/vinegar mixture, cooking it until the beets and apple are just hot (about 1 minute).

4. Cool in refrigerator overnight and serve cold, or serve hot right away.

5. You may substitute green cabbage for red cabbage. You may also substitute golden beets for red beets.

Serves 8.

    I'm too lazy to cook so I used pickeled beets. The idea of apple vinegar made me think to add apple slices. Carrots too and just a dollop of sourcream. Left out the sugar. - 5/9/09

    This is a smash hit at my house! It is a nice savoury hot vegetable the night I make it. It is a nice salad the next day and on Friday the remainders make a delightful tangy dressing on salad greens. Tinkered with the ingredients and loved every variation we tried!!!6 STARS - 12/6/07
