Introduction

This high-fiber, high-protein, low-fat salad travels well. This high-fiber, high-protein, low-fat salad travels well.
Number of Servings: 1

Ingredients

    1/4 cup chickpeas (fresh cooked or canned)
    1/4 cup crumbled feta cheese
    3/4 cup chopped raw veggies (onions, avocado, scallions, peppers, tomatoes, cucumber, and celery work well, but use your imagination)

    1 TBS lemon juice
    2 tsp olive oil
    1 tsp dried oregano
    dash salt
    dash pepper

Directions

Rinse and drain chick peas
Crumble feta cheese
Chop vegetables into small (about 1/4") cubes

Mix all ingredients

Refrigerate until ready to serve

Serves one.

    I used dried chickpeas to reduce the sodium and reduced fat feta cheese. Its very yummy, people in the lunch room were jealous cause I had such a healthy lunch. - 3/16/09

    This is absolutely delicious! I love the chickpea/feta combination. I use half the olive oil and more lemon. Now I'm going to try it with white wine vinegar instead of lemon. I love the vinagrey taste! - 6/18/09

    delicious! i used President brand fat free feta which brings the fat content down to only 6gms. You can up the fiber content really easy as well by changing what veggies you use. I notice the nutrition info here uses yellow peppers/cucumbers/onions, try adding blanched beans or carrots. - 5/7/09

    Delicious! I'd add fresh oregano whenever I find it in the grocery store - amazing taste! Goat cheese feta is also wonderful and lower in fat than cow's milk feta (and easier to digest for anyone who is lactose intolerant) - 1/14/09

    This was very yummy. I quadrupled this recipe. I cut the cheese in half and added the same measurement in chickpeas. I also added a 1/2 T of fresh garlic and I used fresh oregano. Yummy! I will make it again. It was super quick and easy. - 3/27/08

    I enjoyed this sooo much. I used my left over asparagus,cucumber,tomatoe,onions, basil and black olives. I also made yogurt cheese and had that instead of feta. Thank you! - 3/23/08

    I really wanted to love this recipe, but the lemon juice was just too strong for my taste. This did improve with having the salad in the fridge for several hours. I will make again and reduce the lemon juice. - 1/8/09

    YUM! This recipe is really versatile in that you can add alternative crunchy veges-- just be sure to start with the basics listed in the recipe. I even tossed in a cup of leftover brown rice and it worked fine. - 2/25/08

    Delicious! I loved it - I made it for a quick and tasty lunch at work with pita chips. I used carrots, broccoli, red and yellow pepper, and some cauliflower. I would definitely use more broccoli next time! - 1/5/08

    Loved this! Added a tsp of balsamic vineger, minced banana pepper, a tsp of white wine vinegar and fresh basil and chives to the original recipe for some extra zip. Served it with some extra chickpeas and vegetarian chik'n for a healthy and filling lunch! It was fantastic! - 8/13/15

    This was great but i did the ingredients x4 to make enough for my husband and I to take in lunches a few days. i also added lots more veggies and then herbs in the dressing but overall this is an amazing base recipe. I will definately be making this more! - 7/5/09
