Ingredients

    6 - Chicken Breast halves, no skin,
    1 jar (about 2 cups) your favorite Salsa (mild, medium, or hot)
    1-2 TBLSP Brown Sugar
    1 TBLSP Brown Mustard or Dijon Mustard

Directions

Place chicken in crock pot or casserole dish.
Mix all other ingredients in bowl and pour over chicken.
Cook in crock pot on low for about 6 hours, or bake in 375f oven for about 1 hour.
The sauce is delicious over rice, scooped up with baked tortilla chips, or even served over steamed veggies.

    this sounds good! even though i dont like to use my crockpot as much bc it is a pain to clean. but i should def. try it i think i have a jar left of my moms homeaide salasa. ill have to try it over rice. and i think i do have a thing of beans. - 8/15/08

    Hi STEELER! Just wanted to say, if you don't want to use the crockpot, this is DEFINITELY delicious baked in the oven. I use the crockpot sometimes for 'convenience' and to have it ready earlier since I work ... but honestly, tossing it in the oven for an hour or so is just as easy & yummier.

    OMG !!! this was amazing.. it was so good.. and a definate keeper !! I loved how wonderful my house smelled when i walked in from work.. i left it cook on low in my crock pot for about 9 hours.. it was totally scrumptous !!! will pass the recipe on to my daughters ! - 6/11/09

    Very good. Used 1 Tbsp brown sugar twin with 1 Tbsp brown mustard with salsa. Only used 5 chicken breasts and amount of salsa was just right. Will definitely make this again with real sugar next time since calorie diff is small. - 8/15/08

    My kids were VERY happy with this meal, and I enjoyed it too! I chose the oven receipe. I think I would use chicken tenders next time instead of chicken breasts, or increase the amount of salsa by maybe another 1/2 jar if I'm using chk. breasts. I think Spanish rice would enhance the dish too. - 2/19/08

    This was soooooo good! We will be having this a lot! I had a jar of an avocado salsa, and I used horseradish mustard and since my DH is diabetic, I used brown sugar twin. Had salad, ranch style beans with jalapeños and some organic roasted sesame chips to scoop the salsa. It is a keeper! - 4/29/08

    Today is our first day in the quest to make healthier eating choices. I was very pleased with this recipe, it was absolutely fantastic! I used picante salsa and served it over greater value southwest style vegetables for a meal right around 400 calories. I will certainly be making this again! - 3/7/11

    This is amazing! I cooked 4 chicken breasts and the whole salsa jar was just enough. I added some low sodium taco seasoning recipe I found on here, as well as melted Tex Mex Kraft cheese, and served with corn on top. It was a hit!!! - 8/18/10

    Very good! My son shredded his, put it in a tortilla, added cheese, avocado, and sour cream. He said he'd eat it anytime. I ate it plain with some rice. Really good taste. - 8/21/09

    I loved this recipe. Was a little hesitant at first thinking salsa would be a bit harsh. It was excellent.
    I used mild salsa and 2 TBLS brown sugar and 1 TBLS pineapple mustard, it was all I had. My mom thought it was a bit spicy but I thought it was perfect.
    I will make this again and again.

    I baked it in the oven for an hour instead of the slow cooker - and it was amazing. My husband who is picky and not too excited about eating better raved about it. We had old elpaso spicy fat free refried beans and knorr southwestern rice with it both low in calories and fat. - 1/4/08

    I have found crockpot liners in the grocery store. They are a dream to use and no crockpot to wash. For this recipe I did it in the oven and we enjoyed the taste and the ease of making it. Sewrved it with cauliflower fried rice. - 9/10/18

    I make something like this. I just call it salsa chicken. I only use skinless, boneless chicken breasts, spread salsa on top and sprinkle some cheese on the top, and bake in the oven. Its good, have never used brown sugar. Might try this version. - 1/27/16

    I think this recipe is going to become a favorite. You can change it up depending on the salsa you use. I had a jar of Salsa Verde from Costco on hand. Delicious with this.
