Introduction

Low Fat, Low Calorie, Low Carb!! Low Fat, Low Calorie, Low Carb!!
Number of Servings: 12

Ingredients

    Whole Wheat Flour: 1 ¼ c
    Splenda: 1 c
    Baking Powder: ¼ tsp
    Baking Soda: ¼ tsp
    Cinnamon: ¼ tsp
    Nutmeg: ¼ tsp
    All Spice: ¼ tsp
    Ground Cloves: 1/8 tsp
    Salt: ¾ tsp
    Pumpkin (pure, not pie filling): 7.5 oz. (1/2 of 15 oz. can)
    Egg Beaters or Egg White substitute: ¼ cup
    Applesauce (Lite): 6 tbsp

Directions

Preheat oven to 350 degrees. Mix dry ingredients in a bowl. Mix wet ingredients in another bowl.
Combine all ingredients together. Bake for approx. 30-35 minutes (depends on your oven).

Makes 12 muffins, or 12 slices of bread

For variation: add dark chocolate chips (my kids love it!)

If it is not sweet enough for you, add 1/2 cup more splenda.

    I loved this recipe! They are dense and don't rise too much, but i like them anyway because they make you feel full. I had 2 muffins on a bed of sliced bananas for lunch today and it was great^^ - 3/11/11
