Ingredients

    1 egg
    1 cup of spinach
    thin spread of butter
    1 slice of toast
    1 tsp olive oil

Directions

toast bread and butter
put 1 egg in a pan of boiling water
after 1 1/2 minutes put in spinach leave for another 1 1/2 minutes
put spinach nd egg on toast drizzle olive oil over top

    I used horseradish dijon instead of butter and no olive oil. That saves two points so you could have another egg instead. - 7/17/07
